The good ole air fryer. Man, do we love that thing! We’ve made tons of things in our air fryer, much to my surprise.

Which ingredients do I need to make Roasted Breakfast Potatoes and Bacon as an air fryer breakfast?

  • Small gold potatoes
  • Small red potatoes 
  • Vegetable oil
  • Montreal steak seasoning (or any seasoning blend you prefer)
  • Sliced bacon 
  • Scallions
  • Cheddar cheese

How to make Air Fryer Roasted Breakfast Potatoes and Bacon in 3 easy steps

  1. In a large mixing bowl, toss the potatoes with the oil; sprinkle with the seasoning blend and toss once more.
  2. Transfer the seasoned potatoes to the air fryer rack; air fry at 400 degrees F for 6-8 minutes. Lay the pieces of bacon on top of the potatoes; air fry for 5 mins.
  3. Using two large spoons, toss the potatoes and the bacon together, then air fry for 5 minutes longer, or until the potatoes are fork-tender and the bacon is crisp. Serve at once.

Common Questions Asked About This Recipe

Which tools are helpful for making air fryer breakfast recipes?

Well, first off, you need an air fryer! We love the Cuisinart TOA-60 air fryer because it’s a rack air fryer, not a basket air fryer. You can really spread ingredients out over the rack which helps them get a crispier exterior and also to cook a lot faster.

For chopping bacon, I like to use my kitchen shears – they make short work out the task. And, I use my kitchen shears for chopping fresh herbs and scallions, too.

Can I make this dish using just one type of potatoes instead?

Yep. The yellow and red look super pretty together, but use whichever, totally fine.

If my potatoes are large instead of the small size, can I just cut them into chunks?

Yes. Cut the potatoes into 1 1/2-inch chunks – it works just fine.

Can I use russet potatoes in this recipe? They are the most economical at the store.

Actually, you can roast any type of potatoes but because russet potatoes have a very high starch content, sometimes they fall apart more easily when they are fully cooked. Also, russet potatoes have to be peeled before eating them while red and gold potatoes don’t.

How do I know when the potatoes and bacon are fully cooked?

The potatoes will be fork-tender when tested (if the fork slides in easily, the potatoes are done) and the bacon will be crispy and browned.

If I don’t have Montreal Steak Seasoning on hand, which other seasoning blend would be good in this recipe?

Great question! I have used just regular ole seasoned salt in this recipe and also a creole seasoning blend such as Tony Chachere’s.

If you are making this potato side dish to go along with a Mexican breakfast dish (such as Huevos Rancheros or Breakfast Burritos, etc) you can use a southwest or tex mex seasoning blend – delish!

  • 1/2 lb. small gold potatoes skin on, quartered
  • 1/2 lb. small red potatoes skin on, quartered
  • 1 Tbs. vegetable oil
  • 1-2 tsp. Montreal steak seasoning or any seasoning blend you prefer
  • 4 slices bacon cut into large chunks
  • chopped scallions and shredded cheddar as garnish, if desired

Instructions
 

  • In a large mixing bowl, toss the potatoes with the oil; sprinkle with the seasoning blend and toss once more.
  • Transfer the seasoned potatoes to the air fryer rack; air fry at 400 degrees F for 6-8 minutes. Lay the pieces of bacon on top of the potatoes; air fry for 5 mins.
