As I’ve grown in my practice of Instant Pot cooking, I’ve learned some tricks that help me get my recipes, like this Italian Pasta dish, right almost every time. You see, Electric Pressure Cooking is all about two things:
Layers and the liquids. Why? Because pressure cooking uses STEAM to created the pressure that cooks your food so quickly and perfectly. The only way to create adequate steam is to have enough liquid in your pot (at least 1/2 Cup) and in the right place. No liquid? No steam! Liquid too thick? Forget about it!
How do you get that Instant Pot balance just right?
This Instant Pot 5-minute Italian Pasta recipe is a perfect example. As you layer the ingredients you will spread your cooked Italian sausage on bottom, pasta above that, tomato sauce on the top, and your chicken broth poured all around. In this case it’s your chicken broth that will steam up nicely and cook your pasta, but here’s the catch: DO NOT STIR!!!! If you stir in the thin chicken broth with the thicker tomato sauce, there’s a good chance your liquid will immediately be too thick to create circulating steam throughout your pot. If that happens, you’ll need to add MORE liquid, which could seriously affect the flavor and texture of your final dish.
Layer everything according to the recipe, then put the lid on. RESIST the temptation to stir it up! And in a zippy 5-minutes you’ll give a quick release to perfect, creamy Italian Pasta that your family will love! Serve it with these equally simple, yet delicious, Quickie Parmesan Bread Sticks, and dinner is done.
