On the hunt for festive appetizers, I stumbled upon this goat cheese log that took my breath away with its simplicity. First of all, I love goat cheese, so pretty much anything with goat cheese is going to have my stamp of approval. But when you add tangy cranberries, earthy chopped pistachios, all drizzled with warm honey… it becomes a little taste of heaven in your mouth.

A Goat Cheese Log is Elegant but Easy!

I love appetizers like this because they are so easy to make. For most cheese logs, you simply buy the cheese, spread out your “crust”, and roll away! In the end you get a fancy, flavorful cheese log perfect for serving guests or wrapping in saran wrap and giving in a gift basket. Goat cheese is a great carrier, too. Because you often already buy goat cheese in logs, they are easy to just unwrap, roll, and wrap back up again!

My favorite way to serve any cheese ball or cheese log is on a fancy cutting board or charcuterie board. My editor, Jenny, has this one that she LOVES to pull out for special gatherings. Simply place assorted cheeses, meats, cheese logs, crackers, and other treats across the board and you’ve got an elegant appetizer with ZERO effort.

Where do you buy Goat Cheese?

Of course, a local Goat Farm, like Bennett’s Holy Goat Creamery in Manhattan, Kansas would be the very best option! But I have found that Aldi has the greatest selection of cheeses at a completely reasonable price. That’s where I buy most of my specialty cheese, if I can, and their goat cheese is ideal for this recipe. If you haven’t checked out Aldi lately, here are some of my lesser-known tips about shopping there. (And I do love me some Aldi!)

Cranberry Pistachio Goat Cheese Log

This goat cheese log with be perfect for the holidays. Tangy goat cheese with sweet, tart cranberry smoothed over your favorite cracker makes the perfect appetizer for your holiday gatherings.

Ingredients

  • 4 oz. log goat cheese
  • 1/3 cup finely chopped pistachios
  • 2 Tbs. dried cranberries finely chopped
  • 1 Tbs. honey warmed a bit
  • tiny pinch of red pepper flakes

Instructions

  1. Combine pistachios with cranberries, honey and red pepper flakes; place mixture onto a large plate, spread into a single layer.
  2. Gently roll goat cheese in the prepared pistachio mixture, pressing it into all sides of the goat cheese log.
  3. Serve with toasted baguette slices or your favorite crackers.
