HOW TO MAKE SHREDDED BEEF TATER TOT CASSEROLE
Preheat the oven to 400°F.
Add a swish of olive oil in a large, heavy-duty skillet over medium-high heat.
When the oil is nicely hot, add the shredded roast beef, cooking it until just browned and a bit crispy, 3-4 minutes.
Add the barbecue sauce, corn, tomatoes, barbecue seasoning, garlic, and cumin to the beef.
Mix well and simmer over medium heat for 5 minutes; sprinkle with 1 cup of shredded cheese. Arrange the tater tots on top.
Bake for 25 minutes until the tater tots are crispy and golden brown.
Sprinkle with the remaining cup of shredded cheese during the last 5 minutes of baking time.
Garnish with a drizzle of BBQ sauce and chopped green onions and serve at once.
WHICH TOOLS HELP MAKE THIS RECIPE?
My favorite type of heavy-duty skillet is a Lodge 12-inch cast iron skillet.
I love how cast iron really holds the heat so it can give superior browning to meat – this adds tons of flavor!
Wooden cutting board – for slicing the roast beef, it’s nice to have a large cutting board that has a channel around the edge on one side.
The channel is where the juices from the meat can gather, keeping them from running off the cutting board and making a mess.
