Ingredients
3-4cupscookedshredded leftover roast beef
olive oilfor crisping/browning the beef
16ounce bottle barbecue sauce
14ounce can Mexican corn with peppersdrained
10ounce can tomatoes with green chiliesdrained
1tablespoon your favorite barbecue seasoning blend
1tablespoon dehydrated onions
1teaspoon granulated garlic
1teaspoon ground cumin
1cupshredded cheddar cheese
30ounces bag tater tots
1 cup shredded cheddar cheese
2green onionsthinly sliced, green parts only, for garnishing
barbecue saucefor garnishing
Instructions
Preheat the oven to 400°F.
In a large heavy-duty skillet over medium high heat, add a swish of olive oil. When the oil is nicely hot, add the shredded roast beef, cooking it until just browned and a bit crispy, 3-4 minutes.

To the beef in the skillet, add the barbecue sauce, corn, tomatoes, barbecue seasoning, dehydrated onions, garlic, and cumin. Mix well, and simmer over medium heat for 5 minutes.

Sprinkle with 1 cup of shredded cheese, then arrange the tater tots on top.

Bake for 25 minutes until the tater tota are crispy and golden brown. Sprinkle with the remaining cup of shredded cheese during the last 5 minutes of baking time.
Garnish with chopped green onions and drizzle with extra barbecue sauce, as desired. Serve at once.
