Shredded Beef Tater Tot Casserole

Preheat the oven to 400°F.
In a large heavy-duty skillet over medium high heat, add a swish of olive oil. When the oil is nicely hot, add the shredded roast beef, cooking it until just browned and a bit crispy, 3-4 minutes.

To the beef in the skillet, add the barbecue sauce, corn, tomatoes, barbecue seasoning, dehydrated onions, garlic, and cumin. Mix well, and simmer over medium heat for 5 minutes.
16 ounce bottle barbecue sauce, 14 ounce can Mexican corn with peppers, 10 ounce can tomatoes with green chilies, 1 tablespoon your favorite barbecue seasoning blend, 1 tablespoon dehydrated onions , 1 teaspoon granulated garlic, 1 teaspoon ground cumin, 1 cup shredded cheddar cheese
Sprinkle with 1 cup of shredded cheese, then arrange the tater tots on top.

Bake for 25 minutes until the tater tota are crispy and golden brown. Sprinkle with the remaining cup of shredded cheese during the last 5 minutes of baking time.
Garnish with chopped green onions and drizzle with extra barbecue sauce, as desired. Serve at once.
