I have no idea where this recipe originated but I’ve been making it for years.

I love to make each component of this recipe, then set it up as a dessert bar, letting my guests each assemble their own napoleon….which they absolutely love doing!

For whatever reason, this recipe makes people SO HAPPY….possibly because it’s one of those desserts that looks rather FANCY, making your peeps feel like you really outdid yourself on their behalf.

Just smile and enjoy the accolades – no need to tell them that making this dessert it easier than falling off a log!

I typically use a combination of blueberries and strawberries for this dessert, but you can use any combination of summer berries that you prefer…strawberries, blueberries, raspberries, blackberries – you name it. Once I even added some diced peaches to the mix and it was beautiful.

What Ingredients Will You Need to This Easy Summertime Dessert?

  • Honey

    I keep raw Kansas honey on hand at all times for sweetening things such as this.  You could also use agave nectar in place of the honey in this recipe.

  • Wonton wrappers

    You’ll typically find these in the Asian section of the produce department of your grocer.  Sometimes I have even purchase spring roll wrappers and cut them to the size I need for this recipe – either one will work just fine.

  • Cream cheese, granulated sugar, almond extract

    These ingredients make up the creamy, sweet filling for this recipe. I use whichever cream cheese I have on hand – full fat, low fat, or even fat free; any one of them tastes delicious in this recipe.

    I love the flavor of the almond extract, but if all you have on hand is vanilla, no worries – it works just fine.

  • Blueberries, strawberries, granulated sugar, lemon zest, orange zest, triple sec liqueur, fresh mint

    This is my favorite combination of berries for this dessert, but use whichever summer berries you prefer.

    You can adjust the sugar based on how sweet your berries happen to be, and the lemon zest and orange zest make the berries taste outstandingly FRESH.

    Adding the triple sec liqueur gives an additional shot of orange flavor.  No triple sec on hand?  No worries. The fresh mint is the finishing touch as a pretty garnish.

Easy Recipe Tips for Making Berry Napoleons with Honey-Baked Wonton Wrappers

  • What happens if I don’t remove the honey-baked wontons from the baking sheet immediately after they come out of the oven?

Trust me on this, you DON’T want to go there! Remove those wontons from the foil at once, placing them onto a cooling rack to cool.  Otherwise, the honey will cause the wontons to adhere to the foil, making it nearly impossible to remove them once they cool.

  • I didn’t do as advised and my wontons are now completely stuck to the foil.  Is there anything I can do to remedy this situation?

Not really, but when I did this once (and never again!) I served this dessert in small bowls, placing the cream cheese filling on the bottom; next I added the berries then I crumbled the broken wonton wrappers over the top of the berries.

Nobody was the wiser and it was still very delicious. Maybe not as pretty, but still delicious!

  • Can I make this dessert in advance?

Great question.  You can make all the components ahead of time, but you can’t assemble the dessert until you’re very close to serving it.  Once you assemble the ingredients, these Summer Berry Napoleons with Honey-Baked Wonton Wrappers get soggy pretty quick.

  • Is the citrus zest really THAT important in this recipe? Is the extra step really necessary??

Yes! Yes! Yes! The citrus zest in this recipe may be the most important ingredient of ALL. As a matter of fact, don’t be tempted to leave citrus zest out of ANY of your recipes – it’s THAT powerful and wonderful, truly.

Fresh citrus zest adds a brightness and freshness to recipes that no other ingredient can bring.  For this reason, one of my very favorite kitchen tools is a Microplane citrus zester.  This handy tool makes zesting citrus super easy and fun – you’ll never be tempted to skip this ingredient again.

Ingredients
 

  • 1/2 cup honey
  • 24 wonton wrappers, 3" x 3", found in the Asian section of the produce department of your favorite grocer
  • 8 oz. cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp. almond or vanilla extract
  • 2 cups fresh blueberries
  • 2 cups sliced strawberries
  • 1/4 - 1/2 cup granulated sugar, depending on how sweet you prefer the berries to be
  • zest of ½ lemon
  • zest of ½ orange
  • 2-3 Tbs. triple sec liqueur
  • fresh mint, for garnishing

Instructions
 

  • Preheat oven to 375 degrees. 
  • Place the berries into a bowl with the sugar, lemon zest, orange zest, and triple sec; toss gently to combine and set aside.
  • Line baking sheets with aluminum foil and spray generously with nonstick spray. Place the won ton wrappers onto the prepared baking sheet, making sure they don't touch each other, working in batches if needed.
  • In a small sauté pan over low heat, warm the honey to liquefy it.  Using a silicone brush, brush each won ton wrapper with the warm honey; bake just until golden brown, watching closely, so the won ton wrappers don’t get too dark, approximately 8-10 minutes.  Immediately remove the won ton wrappers to a wire cooling rack. (This is a must at this point! If the won ton wrappers cool on the foil, you won't be able to pry them off and they break.)
  • Meanwhile, In a medium mixing bowl, beat the cream cheese, sugar, and almond extract until smooth. 
  • To create the napoleons, spread some of the cream cheese mixture onto each baked won ton wrapper, then top with berries. Add a second won ton wrapper on top, then repeat with cream cheese and more berries. Garnish with mint and serve at once.
