Anything wrapped in crescent roll dough and baked until golden brown is always delightful….am I right? These Crescent Roll Chicken Bundles are no exception.
Think of the filling for these bundles as a warm, basic chicken salad that you can dress up or dress down. This recipe came to me by way of my neighbor, friend and wine buddy, Alma Morse. and for the record, I still can’t make these bundles nearly as good as she can!

I typically keep the chicken filling more on the basic side for my guys, but the addition of pimentos and diced green pepper or chopped scallions would add some pretty color and also a bit of crunch.

Helpful and Easy Recipe Tips –
- Always use the crescent roll dough when it’s chilled, even if you have to return it to refrigeration half way through the recipe process.
- Crescent Roll dough that warms up to room temp is nearly always very difficult to work with!
- I’ve discovered that using canned chicken (instead of rotisserie chicken meat or chicken I cook at home) when making these Crescent Roll Chicken Bundles makes the filling much more creamy. 🙂
- Using the seasoned croutons for the topping really makes a difference in this recipe – the added crunch really compliments.
- You can use low fat cream cheese for this recipe – it works just great.
- Be sure that when you are adding the milk to the cream cheese that you do it a little at a time.
- Even though the recipe only calls for 4 Tbs. of milk, if you add the milk all at once you will get a very lumpy mixture that’s hard to smooth out…IF it even will.
- For the best browning, I start my Chicken Bundles out on the lowest rack in the oven, then move them up to the center rack, half way through the baking time. This makes sure both the bottom and the top of each bundle gets golden brown and flaky.

Alma June's Crescent Roll Chicken Bundles
Ingredients
- 8 oz. cream cheese softened
- 4 Tbs. milk
- 24 oz. can cooked shredded chicken, or 3 cups cooked shredded chicken breast, finely chopped
- 1 tsp. granulated onion
- kosher salt and freshly ground black pepper, to taste
- 2 cans crescent roll dough
- 1 cup seasoned croutons, crushed (may substitute panko bread crumbs, if desired)
- 2 Tbs. butter, melted
Instructions
- Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper; spray the parchment with nonstick spray.
- In a mixing bowl, combine the softened cream cheese with the milk, adding it a little at time until the mixture is smooth and creamy. Stir in the chicken and granulated onion and combine well; season to taste with salt and pepper.
- Unwrap both cans of the crescent roll dough, dividing the dough from each can into 4 rectangles on a clean work surface; you will have 8 rectangles total.
- Top each rectangle of dough with 1/8 of the prepared chicken mixture. Gently mold the crescent dough up around the chicken mixture, pinching it together with your fingers where needed to make each bundle; place each bundle onto the prepared baking sheet.
- In a small mixing bowl, combine the crushed croutons with the melted butter; divide evenly, sprinkling over the top of the filling in each chicken bundle. Bake the bundles, uncovered, for 20-25 minutes, or until golden brown. Serve at once.
