Chocolate-Covered Cheesecake-Stuffed Strawberries

I’m not sure where this recipe originated, but I do remember the first time I made these little treats.  I was expecting it to be a tedious process, but guess what?? It’s not! Once you get all three of the components ready (strawberries, melted chocolate, and cheesecake filling), these come together super quickly and they are beautifully decadent. They will make the recipient feel very special….guaranteed.

Easy Recipe Tips for Making These Impressive Chocolate Cheesecake Treats

  • What kind of cream cheese should you use? You can use full-fat or low-fat cream cheese – either one is just fine.  The big thing here is that, under NO circumstances, should you soften the cream cheese in the microwave.  This is a recipe for disaster and I know all about it.  There is no amount of powdered sugar in the land that can firm up the cheesecake filling if you nuke the cream cheese, so DON’T go there!
  • What brand of chocolate should you use? I like Ghiradelli or Cocoa Dolce chocolate bits, but any good quality chocolate works great. And, you can mix up the type of chocolate that you use too – I prefer a more semi-sweet mixture, but if you like all milk chocolate or even white chocolate, feel free.
  • Is the chocolate difficult to melt?  Nope. As long as you use short bursts of power in the microwave to melt your chocolate, it will be fine.  Short cooking bursts with stirring in between keeps the chocolate from scorching….this is very important.

Chocolate-Covered Cheesecake-Stuffed Strawberries

Nothing says I LOVE YOU like chocolate, strawberries, and cheesecake!  These little bundles are very quick, easy, and impressive.  

Ingredients

  • 24 large strawberries, washed and thoroughly dried
  • 8 oz. cream cheese, room temperature (let cream cheese soften on the counter - I softened it in the microwave once, and it was a total disaster!)
  • ½ cup powdered sugar
  • 1 tsp. pure vanilla extract
  • 5 oz. premium semi-sweet chocolate
  • 3 oz. premium milk chocolate
  • 1 Tbs. graham cracker crumbs

Instructions

  1. Slice off the stem of each strawberry; use a paring knife to scoop out a little bit of each berry to make a cavity in the center; using the corner of a paper towel, gently pat each strawberry cavity as dry as you can. Set berries aside.
  2. In a mixing bowl, combine cream cheese, powdered sugar, and vanilla using an electric mixer; beat until smooth. Place this mixture into a pastry bag fitted with a large fluted tip; reserve. 

  3. Place chocolate In a small glass bowl; microwave on full power for 30 seconds; gently stir, using a small silicone spatula. Microwave in 15 second increments, stirring each time, until chocolate is completely melted.  The cooking time will vary based on the type and amount of chocolate you are using, as well as the power of the microwave.  Pour the melted chocolate into a small, deep bowl. 

  4. Using your fingertips, dip each strawberry into  the melted chocolate. Set dipped strawberry onto a baking sheet that has been lined with parchment paper. 

  5. After chocolate has set up a bit, pipe the reserved cream cheese mixture in the pastry bag into the cavity of each strawberry, mounding it a bit at the top of each strawberry, as desired.  (The hardened chocolate helps hold the strawberries in place while you pipe the cheesecake filling into each one.) 

  6. Sprinkle a smidgen of  graham cracker crumbs onto the cream cheese filling in each strawberry, for garnish, as desired. 

  7. Strawberries are best served at room temperature within 6-8 hours of preparation.
