If you eat chili here in the Heartland, it’s a tradition to serve it alongside a cinnamon roll – such a delicious combination. Some folks are skeptical at first, but I promise you won’t be disappointed.
And what about white chili? White chili puts a twist on traditional red chilis that’s unique, not to mention super delish. We really enjoy White Chicken and Rice Chili as well as Easy Rotisserie Chicken Soup with White Beans.

What Ingredients Will You Need to Make Rio Grand Ranch-Style Chili?
- Lean ground beef
- Onions
- Pinto beans
- Golden hominy
- Diced tomatoes
- Diced tomatoes and green chilies
- Beef broth
- Ranch dressing mix (dry)
- Taco seasoning
How to Make Rio Grand Chili Chicken in 2 Easy Steps
- Cook the ground beef and onions in a Dutch oven until fully cooked throughout; drain any fats.
- Stir in the remaining ingredients and combine well; simmer for 30 minutes, then serve with your favorite toppings.

Any ground meat add to this chili would be delicious – I’ve used ground pork, ground turkey, and even ground venison.
Hominy has a unique flavor and texture – you will likely not forget it. It is made from big kernels of corn that is processed by soaking the corn in a lye or lime solution to soften the outer hull. You will find canned hominy in both golden yellow and white.
This chili recipe doubles easily. Expect to be doing this often once your friends and family experience this chili! This chili also freezes very well.
To make this chili in the crock pot (or any brand of slow cooker), prepare as the recipe directs and instead of simmering the chili on the stovetop, place it into your slow cooker and cover. Cook on low for 4-5 hours or on high for 2-3 hours.
You can use any type of cooked beans in this chili – whatever trips your trigger. Black beans and pinto beans combined with the hominy makes a really pretty chili.
Sides to include with chili are really easy! We like Cheddar and Green Chili Sausage Cornbread, or a good crusty bread (for sopping up the chili juices!) is a plus, too. If you like a more chewy type bread, try out my No-Knead Peasant Bread.

Rio Grande Ranch-Style Chili
Ingredients
- 2 lbs. lean ground beef
- 1 yellow onion diced
- 15 oz. can pinto beans rinsed and drained
- 15 oz. can golden or white hominy rinsed and drained (may substitute white hominy, if desired)
- 15 oz. can petite diced tomatoes with juice
- 14 oz. can diced tomatoes with green chilies with juice
- 4 cups beef broth
- 2 Tbs. dry ranch dip mix
- 2 Tbs. dry taco seasoning use your favorite blend
- your favorite toppings such as sour cream, shredded cheese, salsa, tortilla chips, etc.
Instructions
- In a Dutch oven or stock pot over medium heat, brown the ground beef with the onions, crumbling the ground beef as it cooks. When the ground beef is fully cooked throughout and no pink remains, drain off any fats that have accumulated.
- Add the pinto beans, hominy, diced tomatoes, diced tomatoes and green chilis, beef broth, and seasonings; combine well.
- Simmer the chili for a good 30 minutes, at least! Flavors will intensify as it simmers and also as it sits in the fridge as leftovers...if you have any. 🙂 Serve with your favorite toppings.
