Ingredients
- 2 pounds lean ground beef
- 1 medium yellow onion diced
- 15 ounce can pinto beans rinsed and drained
- 15 ounce can golden or white hominy rinsed and drained (may substitute white hominy, if desired)
- 15 ounce can petite diced tomatoes with juice
- 14 ounce can diced tomatoes with green chilies with juice
- 4 cups beef broth
- 2 tablespoons dry ranch dip mix
- 2 tablespoons dry taco seasoning use your favorite blend
- your favorite toppings such as sour cream, shredded cheese, salsa, tortilla chips, etc.
Instructions
- In a Dutch oven or stock pot over medium heat, brown the ground beef with the onions, crumbling the ground beef as it cooks.2 pounds lean ground beef, 1 medium yellow onion
- When the ground beef is fully cooked throughout and no pink remains, drain off any fats that have accumulated.
- Add the pinto beans, hominy, diced tomatoes, diced tomatoes and green chilis, beef broth, and seasonings; combine well.15 ounce can pinto beans, 15 ounce can golden or white hominy, 15 ounce can petite diced tomatoes, 14 ounce can diced tomatoes with green chilies, 4 cups beef broth, 2 tablespoons dry ranch dip mix, 2 tablespoons dry taco seasoning
- Simmer the chili for a good 30 minutes, at least! Flavors will intensify as it simmers and also as it sits in the fridge as leftovers.
