Saucy Asian Chicken & Broccoli Sheet Pan Dinner

Make sure you use low-sodium soy sauce for this dish. It can get real salty real quick if you don’t! If you only have regular soy sauce, start with 1/2 cup. Check for taste. Add a teaspoon at a time until you reach desired flavor.
Garlic Ginger Sauce
3/4 C. low sodium soy sauce
1/2 C. water
1/4 C. white vinegar
1/4 C. olive oil
1 Tbs. freshly minced ginger
4 cloves garlic, crushed
1/4 C. honey
Chicken & Broccoli
1 lb boneless skinless chicken breast, cut into strips
1 head broccoli, cut into florets
1 red bell pepper, cut into strips
sesame oil
1 small bottle sesame seeds
4 scallions, chopped
Preheat the oven to 400 degrees F. In a saucepan, whisk all sauce ingredients together until smooth; bring to a simmer over medium heat and cook until reduced and thickened a bit.
Meanwhile, place chicken, broccoli, and red pepper onto a sheet pan. Drizzle 1/2 cup sauce over top of the chicken and just a few tablespoons over the veggies. Bake, uncovered, for 10-15 minutes.
Remove from oven and drizzle with additional warm sauce; garnish with a splash of sesame oil, then a good sprinkle of sesame seeds and scallions. Enjoy as is or serve over rice!
