I am ALWAYS looking for good ways to use up leftover cooked pulled pork. I love to cook up pork butts in my Instant Pot on the weekends because they yield lots of juicy, tender meat….aka cooked pulled pork!
I find having cooked meats in my fridge to start the work week really helps me feel like dinner time is do-able. I’m not freaking out because I’m unprepared for making meals – whew!
For instance, think of all the things you can quickly and easily make when you’ve got cooked, chopped meats on hand in the fridge. Things like quesadillas, wraps, grilled sandwiches, salads, subs, pastas, and soups….just to name a few.
One of my favorite ways to make quesadillas is in the oven – you can make several at one time that way. If that sounds good to you, try these Pulled-Pork Oven Quesadillas.

How to Make Pulled Pork Sweet Potatoes in 3 Easy Steps
- Bake the sweet potatoes until the flesh is very fork-tender, then slice them lengthwise, opening up each potato so you can dress it.
- Combine the cooked pulled pork with the bbq sauce, placing some pork on top of each sweet potato.
- Lastly, garnish each potato as desired – top with cheese, scallions, bacon, relish, and creamy chipotle sauce, as desired! Serve at once.
Easy Recipe Tips for Making Loaded Pulled Pork Sweet Potatoes
Why does the recipe instruct to bake the potatoes directly on the oven rack?
- I’m so glad you asked this question. I’ve found that baking the potatoes this way lets them get super crispy all the way around. Yes, sometimes the sweet potatoes can ooze a bit, but it an easy clean-up once your oven has cooled down.
What other ways are there to cook sweet potatoes for this recipe?
- As long as the sweet potatoes are fork-tender when done, you can actually cook them any way that you prefer….such as in your Instant Pot, slow cooker, grill, or smoker. (Have you ever had a SMOKED SWEET POTATO??? Pure heaven. )
Can I substitute other cooked meats for the pulled pork in this recipe?
- Totally! If you have leftover cooked roast beef or shredded cooked chicken, feel free to use either of those in this recipe in place of the pork. (Nearly any type of cooked meat will work in this recipe!)

Loaded BBQ Pulled-Pork Sweet Potatoes
Loaded Sweet Potatoes
- 4 large sweet potatoes, skins on, rubbed with vegetable oil
- 2 cups cooked pulled pork, warm
- 1/4 cup crumbled cooked bacon, or more as desired
- chopped scallions and shredded cheddar, for garnishing
- 1 cup Chipotle BBQ Sauce, divided use, plus more for drizzling, we love Holmes-Made Chipotle BBQ Sauce
- your favorite relish, for garnishing, we love Holmes-Made Cowboy Candy Relish
Creamy Chipotle Sauce
- 1/3 cup sour cream
- 1/3 cup Ranch dressing
- 1/2 tsp. chipotle sauce, or to taste, may substitute chipotle powder or minced chipotle pepper in adobo
Bake the Sweet Potatoes
- Preheat the oven to 425 degrees F. Place the oiled baked potatoes directly onto the center oven rack; baked, uncovered, for 45-60 minutes or until very fork tender and the skins are nicely charred and crisped. Remove the sweet potatoes to a platter.
Make the Creamy Chipotle Sauce
- In a small bowl, combine the sour cream and Ranch dressing with the chipotle sauce until well blended and smooth.
Assemble the Sweet Potatoes
- In a medium mixing bowl, combine the cooked pulled pork with approx. two-thirds of the bbq sauce.Slice the baked sweet potatoes lengthwise, spreading each one open, carefully using your fingertips. Using a fork, fluff the cooked flesh a bit; season with salt and pepper to taste.
- Divide the warm bbq pork between the sweet potatoes; top the pork with the prepared creamy chipotle sauce mixture; garnish with the crumbled bacon, chopped scallions, cheese, and relish. Lastly, drizzle more bbq sauce over the top of each potato. Serve at once!
