Pulled Pork Oven Quesadillas
2 ½ – 3 cups cooked pulled pork
2/3 cup fresh salsa
1/3 cup chopped scallions
1 tsp. ground cumin
½ tsp. kosher salt
½ tsp. oregano flakes
6 flour tortillas (8 inch)
¼ cup melted unsalted butter
2 cups (8 oz.) shredded Monterey Jack or Colby Jack Cheese
Preheat oven to 400 degrees F.
In a large skillet, combine pulled pork with salsa, scallions, cumin, salt, and oregano flakes; cook, uncovered, over medium heat for a few minutes until hot throughout, stirring occasionally.
Brush one side of each tortilla with melted butter, placing buttered side down onto lightly greased baking sheet. Sprinkle 1/3 cup of cheese onto half of tortilla; top with 1/3 cup prepared pork mixture. Fold tortilla over filling. Repeat with remaining tortillas, pulled pork filling, and cheese.
Bake quesadillas for 12-15 minutes, or until quesadillas are crisped and golden brown, turning each quesadilla over half way through baking time. If desired, cut quesadillas into wedges and serve garnished with sour cream, guacamole, salsa, and cilantro.
