Over the years, I’ve found there are a few things that my guys especially like having in the fridge, and QUICHE is one of them. They can slice off a piece (ok, a hunk), heat it in the microwave and out the door they go to feed cows or work calves or burn pastures….whatever. And Mom is happy because all the food groups are covered within that one piece of quiche. #MomScore 🙂
Easy Recipe Tips for Making Great Quiche
1. Great quiches are easy to throw together and such a fabulous way to use up leftover cooked meats. This one features leftover Thanksgiving ham that I packaged into 1-2 cup portions and froze for use later on, knowing that quiche would be one of the first recipes I’d use it for.
And speaking of the Thanksgiving HAM – do you need that recipe, too? I say yes! I love to cook holiday ham in my 8 Quart Instant Pot in just minutes….so awesome.
2. When you’re making quiche, you can actually use nearly ANY cooked, leftover meat, such as ham, sausage, bacon, ground beef, salmon, or even cooked shredded chicken or turkey. And, I often use a combination of these meats in my quiche recipes – such as sausage and bacon, or ground beef and sausage – the sky is the limit, truly.
3. And please don’t feel obligated to use homemade pastry crust when you make quiche! I do love making my own big-batch of homemade pie crusts so I can stock my freezer, but it’s definitely not a deal breaker. I do try to keep a couple boxes of store-purchased pie crusts in my freezer at all times, (emergencies!) and I’d say the majority of those are used for making quiche!

Deep Dish Ham and Broccoli Quiche
Ingredients
- 1 deep dish pie crust, store purchased or made from scratch
- 6 large eggs
- 1 1/2 cups heavy cream (may substitute half and half but your quiche won't be as decadent and smooth in texture)
- 1 - 1 1/2 cups diced ham
- 1 cup frozen chopped broccoli florets, thawed
- 1 - 1 1/2 cups sharp shredded cheddar
- 1/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
Instructions
- Preheat oven to 375 F.
- Place the pie crust into a deep dish pie plate, pricking the bottom and sides all over with a fork. Press the edges of the pie crust just over the edge of the pie plate and seal by pressing down a bit on the pie crust (this helps the pie crust not be able to shrink back when baked).
- Fill the empty pie crust with pie weights or dry beans, then bake the pie crust on the center oven rack, uncovered, for 10 minutes. (This is just par-baking the pie crust. You will bake it again once it's full of the quiche filling.)
- In a large mixing bowl, whisk eggs and cream together; stir in remaining the ingredients and combine well. Pour egg mixture into the prepared par-baked pie crust.
- Reduce the oven temperature to 350 F. Bake the quiche, uncovered, on center oven rack 40-45 minutes, or until a knife inserted into the center of the quiche comes out clean. Let cool 5 minutes before slicing into pieces.
