How to Make Ice Cream Sundaes with Red Wine Chocolate Sauce in 2 Easy Steps

  1. In a skillet over medium heat, bring the wine to a simmer then add the chocolate morsels; whisk until the chocolate is melted and the chocolate sauce is smooth. Let the sauce cool to room temperature.
  2. Scoop the vanilla ice cream into your favorite wine glasses, drizzle the chocolate sauce over the ice cream, then garnish with a tea cookie, raspberries, and fresh mint. Serve at once!

Recipe Tips for Making Ice Cream Sundaes with Melted Chocolate Chips and Wine

  • Can I make the chocolate sauce with milk chocolate chips instead of semi-sweet or dark chocolate chips?

Any type of chocolate chips can be used to make the chocolate sauce, as preferred.

  • Can I make the chocolate sauce ahead of time?

The chocolate sauce can definitely be made ahead of time. It will set up as it rests; just prior to serving it, place the chocolate sauce into the microwave using the defrost setting a few seconds at a time liquefy the chocolate sauce once more.

  • If I don’t have sweet red wine, can I still make this recipe?

If you need to use a more dry red wine to make the chocolate sauce, increase the sugar from 1/4 cup to 1/3 cup, then do a taste test to see if more sugar is needed.

  • Can I double this recipe?

    This recipe can easily be doubled – just make the sauce in a deep skillet. This is a great recipe to make if you need to serve a large group.

Ingredients
 

  • 1 cup sweet red wine, I used 456 Wineries Sweet Rose Summation Wine
  • ¼ cup granulated sugar
  • ¼ tsp. kosher salt
  • 1 cinnamon stick
  • 1 star anise
  • 2 cups semi-sweet or dark chocolate pieces
  • 1/2 gallon your favorite vanilla ice cream
  • Fresh raspberries, mint sprigs, and small wafer or tea cookies as garnishments

Instructions
 

  • In a saucepan over medium heat, bring the wine, sugar, and salt to a simmer; add the cinnamon stick and star anise, simmering for 5 minutes.
  • Remove from heat and add the chocolate pieces, gently whisking until the sauce is smooth and glossy; let the chocolate sauce cool to room temperature.
  • Spoon the vanilla ice cream into your favorite wine glasses; drizzle the prepared chocolate sauce over the ice cream, then garnish with a tea cookie, fresh mint, and raspberries. Serve at once.
