There’s a lot to be said about frozen bread dough – it’s handy to keep on hand and I try to make sure I have some in the freezer. After all, who doesn’t love to come home to bread baking in the oven? My guys go crazy for it.
It’s easy to turn the loaves of dough into rolls or monkey bread just by portioning off some of the dough and rolling it into balls to raise and bake.

How to make Bacon Cheddar Rolls in 5 easy steps –

- Thaw frozen bread dough. When dough is thawed, place onto a lightly floured work surface; let rest for 10 minutes. Using your favorite rolling pin, roll the dough out into a 12-inch wide x 10-inch tall rectangle. **If dough resists and pulls back as you roll it out, let it rest for another 10 minutes, then try again.
- Once your dough is rolled out into the rectangle, spread it with mayonnaise; sprinkle the shredded cheese and chopped bacon over the mayonnaise.
- Starting at the long side of the dough that is closest to you, roll up the filling and dough. Using your favorite serrated knife, slice the log of dough into 12 small rolls. Place the rolls onto a greased 9×13 baking sheet or 9×13 pan.
- Let the rolls rise for 35-45 minutes or until nicely puffy and the pan is fully covered with the rolls.
- Preheat the oven to 350 degrees F. Bake the rolls for 15-20 minutes on the center rack of the oven, until golden brown; brush with melted butter, if desired. Cool slightly before serving.

Can I freeze bacon cheddar rolls?
Absolutely. After you’ve sliced the log of dough into the rolls, place them onto a cookie sheet, not touching, and freeze solid. Once the rolls are frozen, place them into a freezer bag and into the freezer. This way, you can bake as many or as a few bacon cheddar rolls as you’d like later on.
If I freeze these rolls, how do I thaw, rise, and bake them?
Place the desired number of frozen rolls into your greased baking pan, leaving about 1-inch of space around each one. Let the rolls thaw and rise in a draft-free spot in your kitchen until they are almost doubled in size (or just nice and puffy), then bake as the recipe directs.
Why does frozen bread dough seem kind of hard to roll out sometimes? What should I do?
This is a great question and I’ve definitely noticed this at times when using frozen bread dough. If the dough seems especially resistant to being rolled out (like you roll it out and the dough just immediately shrinks right back), walk about for 10 minutes.
After letting the dough rest for that time, it should have relaxed somewhat to allow itself to be rolled out into a rectangle. If it still fights you, give it another 5 minutes of rest.
Do I have to use frozen bread dough for this recipe?
Not at all. If you have a bread dough recipe that you prefer, go for it – any type of basic bread dough will work just great for making these rolls. Here’s the basic bread dough recipe that I often use.
How can I customize these cheese rolls?
You could flavor the mayonnaise by adding crushed garlic, spices, mustards, fresh herbs, parmesan, or horseradish – the sky is the limit. Switch up the flavors by varying the shredded cheeses and cooked meats. We love ham and swiss, ham and provolone, and even cooked ground beef with cheddar.
Does it matter what kind of baking sheet you use for baked goods?
Actually, it really does! Using baking sheets that are of good solid construction will help ensure that baked goods brown much more evenly. Browning adds a layer of flavor, so it’s important anything we are baking or cooking.
I like this type of baking sheet that has a rimmed edge to keep ingredients from falling off.
Can I make 6 large rolls instead of 12 small rolls?
Sure can. You’ll just need to add a couple additional minutes to the baking time.

Easy Bacon Cheddar Rolls
Ingredients
- 1 loaf frozen bread dough, thawed
- 1/4 cup mayonnaise
- 3/4 cup shredded cheddar cheese, we love sharp cheddar (such as Cabot Seriously Sharp Cheddar)
- 1/3 cup cooked and chopped bacon, more if preferred
- melted butter, optional, for brushing the warm rolls
- grated parmesan, optional, for topping the warm rolls
Instructions
- Place the bread dough onto a lightly floured work surface; let rest for 10 minutes. Using your favorite rolling pin, roll the dough out into a 18-inch wide x 9-inch tall r(roughly) rectangle. **If the dough resists and pulls back as you roll it out, let it rest for another 10 minutes on the counter, then try again.
- Once your dough is rolled, spread it with mayonnaise; sprinkle the shredded cheese and bacon crumbles over the mayonnaise.
- Starting at the long side of the dough that is closest to you, roll up the dough, encasing the filling inside. Using your favorite serrated knife, slice the log of dough into 12 even-sized rolls.(Or if you prefer, you can make 6 larger rolls.)Place the rolls onto a greased 9×13 rimmed baking sheet or pan.
- Let the rolls rise in a draft-free area of your kitchen for approx. 1 hour, or until the rolls are about doubled in size and the dough looks very soft and puffy.
