It’s fast, hearty, easy, and filling…not to mention inexpensive. I love it.

I love just about any dish I can make in my cast iron skillet….roast pork tenderloin and potatoes or sizzle steaks with mushroom gravy.

Pasta skillets are a family favorite, no matter the season. Creamy tortellini pasta is divine (and why not add some Spam in place of the sausage?) and we also devour lots of shrimp scampi with orzo pasta.

What to love

  1. We all need a couple of good go-to skillet meals in our repertoire for crunch time, and this will quickly be one of your favorites.
  2. Spam is a great pantry ingredient to keep on hand, and it has a solid shelf life. I always have a couple of cans of Spam available so I can knock this meal out.
  3. Spam with Rice and Eggs can be for any meal of the day!

Spam and Rice Recipe Ingredients

  • Vegetable oil: saute the cubes of Spam in a skillet until they are golden brown.
  • Canned Spam:  I used the original Classic Spam in this recipe, but you could change it by substituting one of their other flavors.
  • Unsalted butter: I use unsalted butter in all my cooking. This allows me to add kosher salt to taste, as needed.
  • Eggs: I like large or extra large.
  • Garlic cloves: May substitute garlic powder or granulated garlic, if desired.
  • Soy sauce: I always use low-sodium soy sauce.
  • Dark brown sugar: Substitute light brown sugar if that’s what you have on hand. In a pinch, I’ve even substituted granulated sugar and honey in place of the brown sugar.
  • Mirin: This is a sweet Japanese wine, similar to Sake. I typically don’t have this on hand, so I substitute sweet white wine, and it works just great.
  • Kosher salt and pepper: Season to taste using these spices.
  • Steamed white rice: I usually use Minute rice or leftover Jasmine rice. Use what you’ve got!
  • Chopped cilantro or scallions: These are your garnishments!

Recipe tips

  • Even if you’re in a hurry, always cook the eggs in this dish over medium heat so they can be soft and creamy in texture. Cooking eggs over high heat results in rubbery texture.
  • If you like a little zip, add a drizzle of sriracha sauce as a garnish. Or, combine sriracha with some mayo and use that for a finishing sauce.

How to Make Eggs Rice and Spam

In a large skillet over medium heat, add the oil. When the oil is nicely hot, add the cubes of Spam.

Don’t add the spam cubes to the oil in the skillet until it’s hot.

You want the Spam to sizzle when it hits the hot oil. If the oil is hot, the Spam can caramelize more quickly.

Cook the Spam until it is nicely brown on the edges.

Add the garlic, soy sauce, brown sugar, and mirin, continuing to cook the Spam cubes until caramelization occurs.

Remove from the skillet to a platter and reserve.

Still over medium heat, add the butter to the skillet. When the butter is melted, add the beaten eggs.

Cook the eggs, stirring gently, until they are fully cooked throughout, taking care not to overcook.

Season the eggs to taste with kosher salt and freshly ground black pepper. Gently fold in the reserved cubes of Spam, then remove from the heat.

Serve over steamed white rice garnished with chopped cilantro or sliced scallions, as garnish.

What is Spam?

In my world, canned Spam is pretty darn wonderful! Yes, it’s salty processed pork in can but it’s also a source of some quick protein.

You can substitute cubed or chopped Spam for any recipe that calls for ham or bacon.

The secret to making Spam taste great is always to brown it in a bit of oil to crisp up the exterior and add a good flavor layer from the caramelization.

Is Spam healthy?

Spam is a canned meat that’s high in sodium and saturated fat, but it is made from high-quality cuts of pork: the shoulder and the ham.

The great thing about Spam is that you don’t have to eat a lot of it to enjoy it, especially when you brown it to get it nice and crispy, adding that extra flavor layer.

Why is Spam so popular?

Spam is popular because it’s super versatile.

You can make sushi with it (it’s called Musubi in Hawaii and is very popular!), make sliders or subs, stir it into cooked pasta dishes (yes, like mac and cheese!), toss it into a creamy soup, or make grilled quesadillas and SPAMwiches.

The options are nearly endless.

Spam is already cooked so you can eat it straight from the can. It’s best when browned in a bit of hot oil, but technically, you wouldn’t have to do that step since it comes fully cooked.

What to eat with Spam and rice

When I make Spam and rice at my house, we keep it pretty simple and just add toast on the side.

Sometimes I take Spam and rice and turn it into a fried rice skillet by adding veggies and eggs.

You can also add Spam and rice to ramen! Talk about an upgrade.

If you grill the Spam, you could add pineapple chunks to make kabobs served over the rice.

Ingredients

  • 1 Tbs. oil
  • 8 oz. can Spam sliced into cubes about 1-inch in size
  • 1 Tbs. unsalted butter
  • 6 eggs beaten
  • 2 cloves garlic minced
  • 2 Tbs. soy sauce I prefer low-sodium soy sauce
  • 2 Tbs. dark brown sugar
  • 2 Tbs. mirin may substitute any sweet white wine
  • kosher salt and pepper to taste
  • 2-3 cups steamed white rice
  • Chopped cilantro or scallions for garnish

Instructions

Notes

RECIPE TIPS

  • Don’t add the cubes of spam to the oil in the skillet until it’s nicely hot. You want the Spam to sizzle a bit when it hits the hot oil. If the oil is hot the Spam can caramelize more quickly. Remember! Good Spam is crispy Spam!
  • Even if you’re in a hurry, always cook the eggs in this dish over medium heat so they can be soft and creamy in texture. Eggs that are cooked over high heat turn out rubbery.
  • Use a silicone spoonula or spatula when stirring the eggs. This tool allows you to get right up to the edge of the pan all the way around as you stir the eggs.
  • If you like a little zip, add a drizzle of sriracha sauce as a garnish. Or, combine sriracha with some mayo and use that for a finishing sauce.
