Ingredients
1Tbs.oil
8oz.can Spamsliced into cubes about 1-inch in size
1Tbs.unsalted butter
6eggsbeaten
2clovesgarlicminced
2Tbs.soy sauceI prefer low-sodium soy sauce
2Tbs.dark brown sugar
2Tbs.mirinmay substitute any sweet white wine
kosher salt and pepperto taste
2-3cupssteamed white rice
Chopped cilantro or scallionsfor garnish
Instructions
In a large skillet over medium heat, add the oil. When the oil is nicely hot, add the cubes of Spam.
Cook the Spam until it is nicely browned on the edges. Add the garlic, soy sauce, brown sugar, and mirin, continuing to cook the Spam cubes until they are nicely caramelized; remove from the skillet.
Still over medium heat, add the butter to the skillet. When the butter is melted, add the beaten eggs.
Cook the eggs, stirring gently, until they are fully cooked throughout, taking care not to overcook; season to taste with kosher salt and freshly ground black pepper.
Gently fold in the reserved cubes of Spam, then remove from heat. Season to taste with salt and pepper.
Serve over steamed white rice garnished with chopped cilantro or sliced scallions, as garnish.
Notes
RECIPE TIPS
Don’t add the cubes of spam to the oil in the skillet until it’s nicely hot. You want the Spam to sizzle a bit when it hits the hot oil. If the oil is hot the Spam can caramelize more quickly. Remember! Good Spam is crispy Spam!
Even if you’re in a hurry, always cook the eggs in this dish over medium heat so they can be soft and creamy in texture. Eggs that are cooked over high heat turn out rubbery.
Use a silicone spoonula or spatula when stirring the eggs. This tool allows you to get right up to the edge of the pan all the way around as you stir the eggs.
If you like a little zip, add a drizzle of sriracha sauce as a garnish. Or, combine sriracha with some mayo and use that for a finishing sauce.
