Who doesn’t love a rich and creamy potato recipe? These scalloped potatoes are an easy side dish that takes only 5 minutes to assemble.

I simmer this creamy side dish until the layers of sweet potatoes are incredibly tender, smothered in a thick, sweet cream sauce.

This au gratin potato recipe is easily cut in half if serving a smaller group.

  • Sweet potatoes
  • Whipping cream

  • Chipotles(optional): If you don’t want the added spice and smokiness from the chipotle peppers, feel free to leave this ingredient out of this au gratin potatoes recipe.

How to Make Creamy Scalloped Sweet Potatoes 

Preheat the oven to 375 degrees F. Peel and thinly slice the sweet potatoes. I love using my mandoline slicer for this.

A mandoline slicer lends help in two great ways: consistency and speed.  All your slices will be exactly the same thickness so they cook evenly and the slicer makes a super thin potato slice, if desired. I also love how quickly and easily you can slice a potato using a mandoline.

Lay them, overlapping half of them in a single layer in a greased 9×13 pan.

In a bowl, whisk the cream, brown sugar, and chipotles together. Pour half of the cream mixture over the potatoes in the casserole dish, and season to taste with salt and pepper.

Repeat with the remaining half of the sweet potatoes and cream mixture.  If the potatoes are not nearly all submerged in the whipping cream mixture, pour some plain whipping cream over the top. Cover this with foil.

Bake the sweet potato casserole until the sweet potatoes are extremely fork-tender and the cream mixture has mostly absorbed into the potatoes. Remove the foil during the last 15 minutes of the baking time.

Let the sweet potato casserole rest for 5 minutes after being removed from the oven. Serve at once.

Can I freeze scalloped potatoes

No, you cannot freeze scalloped potatoes because of the heavy cream. They will curdle if frozen.

Scalloped potatoes, on the other hand, are typically cooked solely in whipping cream with seasonings until the cream has thickened and cooked down into the layers of potatoes.

Rest assured that over time the names for these potato recipes have become pretty synonymous since they are so similar in ingredients, texture, and appearance.

Feel comfortable substituting scalloped potatoes for au gratin potatoes at any time. I promise the potato police won’t come after you.

Whre can I find chipotles at my local grocer

You will find chipotle peppers (jalapenos packed in adobo) in the Hispanic food section of your grocer, either in a can or a jar. Make sure to use them sparingly. They have a lot of intense flavor!

Scalloped Sweet Potatoes

Ingredients
 

  • 3 cups whipping cream
  • 2 Tbs. dark brown sugar
  • 1-2 tsp. chipotle pepper puree or chipotle sauce adjust to taste, depending on how spicy you prefer things
  • 5 large sweet potatoes peeled and thinly sliced

Instructions
 

  • Preheat oven to 375 degrees F.  In a large mixing bowl, whisk together the cream, brown sugar and chipotle sauce.
  • In a seasoned and greased 12” cast iron skillet or a large greased 9 x 13 baking dish, arrange half of the sweet potato slices in an even layer over the bottom of the baking dish, over lapping each one them as you go. Pour half of the prepared cream mixture over the potatoes; season to taste with salt and pepper, if desired.
  • Repeat with remaining half of the sweet potatoes and cream mixture. If the sweet potatoes are mostly submerged in the cream mixture, pour some additional cream over the top; cover the pan with foil.
  • Bake the sweet potato casserole, covered, for 30 minutes. Reduce the heat to 325 degrees F., continuing to cook the potato au gratin for for an additional 40-45 minutes or until most of cream has been absorbed and the potatoes are very fork-tender with a golden brown top.
    Remove the foil during the last 15 minutes of the baking time. Remove the potato casserole from the oven, letting it rest for 5 minutes before serving.

Notes

 
  • To keep your sweet potato slices all the same thickness and make the job easy, use a mandolin instead of a knife and cutting board. This isn’t an absolute, but it sure makes the job of slicing much, much easier.
  • When using a mandolin to slice your sweet potatoes, be sure you use the protective guard tool that comes with your mandolin.  A mandolin has an incredibly sharp blade and you can easily slice the end of your finger off before you even know it! #BeenThereDoneThat
  • Please make sure you allow enough time for baking scalloped potatoes like these.  The assembly is super fast, but these potatoes need a long time in a low and slow oven so they can cook down into a nice thick, creamy consistency.
  • If you don’t want the added bit of spice and smokiness from the chipotle peppers, feel free to leave this ingredient out of this au gratin potatoes recipe.
