Au gratin potatoes….who doesn’t love rich and creamy potato recipes? This recipe for Creamy Au Gratin Sweet Potatoes is no exception.

Scalloped potatoes are an easy side dish that take only 5 minutes to assemble, cooking low and slow until the layers of sweet potatoes are incredibly tender, smothered in a thick, sweet, cream sauce.

I am a huge fan of sweet potatoes. My family? Well, not so much.  In spite of their sweet potato aversion, I find a way to to indulge myself with several sweet potato dishes.

Are Au Gratin Potatoes and Scalloped Potatoes the Same Thing??

If you’ve ever wondered about the difference between potato au gratin vs scalloped potatoes, here’s the technical down-low: Au gratin potatoes typically include cheese as an ingredient and have a bread crumb topping.

Scalloped potatoes, on the other hand, are potatoes that are typically cooked solely in whipping cream with seasonings until the cream has thickened and cooked down into the layers of potatoes.

Rest assured that over time the names for these potato recipes have become pretty synonymous since they are so similar in ingredients, texture, and appearance.

Feel comfortable interchanging the names scalloped potatoes for au gratin potatoes any time.  The potato police are not going to come after you, I promise.

What 4 Ingredients Do You Need to Make a Potato Au Gratin? 

  • Sweet potatoes
  • Whipping cream
  • Brown sugar
  • Chipotles

Easy Recipe Tips for Making Au Gratin Potatoes – 

  • To keep your sweet potato slices all the same thickness and make the job easy, use a mandolin instead of a knife and cutting board. This isn’t an absolute, but it sure makes the job of slicing much, much easier.
  • When using a mandoline slicer to cute your sweet potatoes, be sure you use the protective guard tool that comes with your mandolin.  A mandoline slicer has an incredibly sharp blade and you can easily slice the end of your finger off before you even know it!    #BeenThereDoneThat
  • Please make sure you allow enough time for baking scalloped potatoes like these.  The assembly is super fast, but these potatoes need a long time in a low and slow oven so they can cook down into a nice thick, creamy consistency.
  • If you don’t want the added bit of spice and smokiness from the chipotle peppers, feel free to leave this ingredient out of this au gratin potatoes recipe.
  • This au gratin potato recipe is easily cut in half if you are serving a smaller group.

What is a Chipotle?? I’m not familiar with that ingredient. 

So, a chipotle is a smoked jalapeno. I certainly do not have time to smoke my own jalapenos, so I purchase a jar of chipotles packed in adobo.

Consider chipotle peppers a condiment. I like to process the jar of whole chipotles in adobo in my food processor so they make a paste.  Then, I store the paste in a glass jar in my fridge so they are readily available when I need a teaspoon or two.

Can I find chipotles at my local grocer? If so, where are they located in the store? 

You will find chipotle peppers (packed in adobo) in the Hispanic food section of your grocer, either in a can or a jar.

How should I use chipotle peppers in cooking? 

Sparingly…at least to begin with! Chipotles add both spiciness and smokiness to a dish. Chipotle peppers are a very trendy ingredient and you will see them in lots of recipes these days.

Go easy in adding chipotles to any recipe – always go by taste.  You can always add more, but you can’t take chipotles back!

What Tools Do You Need to Make Scalloped Potatoes?

  • I love my mandoline slicer, especially for slicing any type of potato and nearly any type of cucumber.A mandoline slicer lends help two great ways: consistency and speed.  All your slices will be exactly the same thickness so they cook evenly and the slicer makes a a super thin potato slice, if desired. I also love how quickly and easily you can slice a potato using a mandoline!
  • A good heavy casserole dish or 12-inch cast iron skillet is helpful for baking deliciously creamy au gratin sweet potatoes.

How to Make Creamy Au Gratin Sweet Potatoes in 5 Easy Steps 

  1. Preheat the oven to 375 degrees F. Peel and thinly slice the sweet potatoes; overlapping half of them in single layer in a greased 9×13 pan.
  2. In a bowl, whisk the cream, brown sugar, and chipotles together; pour half of the cream mixture over the potatoes in the casserole dish; season to taste with salt and pepper.
  3. Repeat with the remaining half of the sweet potatoes and cream mixture.  If the potatoes are not nearly all submerged in the whipping cream mixture, pour some plain whipping cream over the top; cover with foil.
  4. Bake the sweet potato casserole until the sweet potatoes are extremely fork-tender and the cream mixture has mostly absorbed into the potatoes; remove the foil during the last 15 minutes of the baking time.
  5. Let the sweet potato casserole rest for 5 minutes after being removed from the oven. Serve at once.

Ingredients

  • 3 cups whipping cream
  • 2 Tbs. dark brown sugar
  • 1-2 tsp. chipotle pepper puree or chipotle sauce adjust to taste, depending on how spicy you prefer things
  • 5 large sweet potatoes peeled and thinly sliced

Instructions

  • Preheat oven to 375 degrees F.  In a large mixing bowl, whisk together the cream, brown sugar and chipotle sauce.
  • In a seasoned and greased 12” cast iron skillet or a large greased 9 x 13 baking dish, arrange half of the sweet potato slices in an even layer over the bottom of the baking dish, over lapping each one them as you go. Pour half of the prepared cream mixture over the potatoes; season to taste with salt and pepper, if desired.
  • Repeat with remaining half of the sweet potatoes and cream mixture. If the sweet potatoes are mostly submerged in the cream mixture, pour some additional cream over the top; cover the pan with foil.
  • Bake the sweet potato casserole, covered, for 30 minutes. Reduce the heat to 325 degrees F., continuing to cook the potato au gratin for for an additional 40-45 minutes or until most of cream has been absorbed and the potatoes are very fork-tender with a golden brown top.
    Remove the foil during the last 15 minutes of the baking time. Remove the potato casserole from the oven, letting it rest for 5 minutes before serving.
