When I made an air-fried chuck roast with potatoes and carrots for the first time for my family, it was a huge hit.
I was surprised when the air fryer cranked out a chuck roast “fast and furiously,” which was delicious.
I have a whole new respect for both Chuck Roast AND the air fryer!
Chuck roast has always been our favorite cut, so I’m big on keeping several in our freezer.
We love to make smoked pot roast burnt ends with chuck roast as well as smoked mississippi pot roast, too. And, because barbacoa beef is the most delicious shredded beef, we use chuck roast for making it all the time, too.

Ingredients for air fryer chuck roast recipe
- Chuck roast: Three pounds is an average size for chuck roast, so that’s what I used for this recipe. Be sure you’ve let it rest before you begin the cooking process in the air fryer – an ice cold chuck roast can’t receive the heat like you want it to.
- Avocado oil: Feel free to substitute olive oil or vegetable or canola oil.
- Your favorite steak seasoning: I usually use McCormick Montreal Steak Seasoning, but feel free to use your personal favorite.
- Baby carrots and baby potatoes: You can leave the baby carrots whole, but cut the baby potatoes in half lengthwise so they can cook in the same amount of time as the carrots do. If you don’t have baby potatoes, you can cut red potatoes into small 1-inch chunks as a substitute.

How to cook chuck roast in air fryer
Remove the roast from refrigeration and unpackaged.
Using your fingers, rub the roast all over with the avocado oil, then press the steak seasoning all over the surface of the chuck roast.

Let the seasoned roast rest for at least 1 hour, uncovered, at room temperature. **This step is absolutely essential for the success of this recipe because you are cooking a fairly tough cut of beef at a fast pace with this method.
If time allows, let the seasoned roast rest for 2 hours, uncovered, at room temperature.
If you’d like your air fryer chuck roast to have an especially deep crust, season the roast with the steak seasoning and allow it to rest in refrigeration, uncovered, for 24 hours before removing it from the fridge to rest at room temperature to air fry.
Be sure to let the roast rest before and after air frying. This is absolutely essential for a tender, juicy roast experience!!
Letting the roast rest before placing it in the air fryer will allow the juices that coagulate at the center during refrigeration to redistribute throughout the meat and to the outer edges.
While the roast rests, place the carrots and potatoes into a large mixing bowl and drizzle with the remaining tablespoon of avocado oil.
Toss the vegetables until nicely coated with the oil. Reserve.

When you’re ready to cook the roast, preheat the air fryer for 5 minutes at 400 degrees F.
Using a silicone basting brush, brush the air fryer rack with some avocado oil.
Place the seasoned and rested chuck roast onto the greased air fryer rack.

Cook the roast for 15 minutes.
Using tongs or a meat fork, turn the roast over.

Surround the roast with baby carrots and baby potatoes.

Reduce the air fryer temperature to 325 degrees F; continue to cook the roast with the vegetables 20-25 minutes longer, or until an instant-read meat thermometer registers 125-130 degrees F. at the center of the roast.
Test the potatoes and carrots with a fork to be sure they are tender.
If the potatoes and carrots aren’t fully tender at this point, air fry them for a few minutes longer after you have removed the roast.
Meanwhile, transfer the roast from the air fryer to a large cutting board; cover tightly with foil and allow the roast to rest for 30 minutes.
This will allow the roast to finish cooking from residual heat and allows the protein fibers to relax for slicing.
The roast will also continue to cook during this resting time, too, from residual heat, raising in internal temperature at the center.

Slice the rested roast across the grain into slices.
Be sure to slice across the grain (not with the grain) so that the protein fibers are shortened, making for a more tender eating experience.
Serve at once with the potatoes and carrots on the side.

How long to cook chuck roast in air fryer
Cook chuck roast in an air fryer at a 400 degrees for 15 minutes on one side or until it’s nicely browned and crispy on the exterior.
Then, reduce the cooking temperature to 325 degrees and cook for additional 20-30 minutes.
This allows the interior of the roast can cook until it reaches 125-130 degrees F. at the center.
At this point, the roast isn’t fully done. It still needs a good 30 minutes to rest so the internal temperature can continue to raise 10 more degrees and also so the roast can rest and become fully tender. You cannot rush this process or you’ll have tough, chewy meat!
Are air fryers good for roasts?
Roasts that have a higher fat content, such as this chuck roast, work the best in the air fryer.
Lean roasts do not work as well in the air fryer since they tend to dry out too much during the quick cooking process. The best roasts for the air fryer are chuck roast, arm roast, sirloin roast and prime rib roast.
Which cooking method is best for for a chuck roast?
Because chuck roast has lots of connective tissue and fat, it’s the perfect for roast for all sorts of cooking methods.
Chuck roast is delicious cooked low and slow in the oven or crockpot and it’s also very tasty cooked in the Instant Pot.
Are air fryers good for roasting meat?
Yes, an air fryers work like a small convection oven.
It generates heat via the air fryer’s fan that circulates heat very rapidly in the small cooking space.
A well-rested roast cooks quickly and evenly, resulting in a juicy center with a crispy outside crust.
Chilled roasts do not cook well in an air fryer.

Great recipe! I didn’t even know it was possible to cook a chuck roast in the air fryer! Mine was just over 2 pounds and 15 minutes on each side worked well. I let rest for two hours before cooking and followed the resting instructions exactly afterwards. The recommended seasoning was a little too salty for me, but I’ll try it with a different dry rub next time. Very satisfying, thank you Chef!!
