Ingredients
 

  • 2 cups diced homegrown tomatoes with juice
  • 28 ounces can crushed tomatoes juice reserved
  • 1 bundle bundle scallions chopped, using both the green and white parts
  • 4 ounces can diced fire-roasted green chilies drained
  • 1 medium jalapeno seeds and membranes removed, diced small
  • 1 teaspoon chipotle sauce or minced chipotles in adobo add more, depending on how hot and smoky you prefer your salsa
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 1/2 cups ketchup
  • 1-2 tablespoon freshly grated horseradish
  • 1 small red onion diced
  • 1 cup your favorite jarred salsa
  • 1 pound small cooked shrimp tails removed
  • 2 medium ripe avocados, peeled and chopped

Instructions
 

  • In a large mixing bowl, combine all the salsa ingredients, except for the avocados.
    2 cups diced homegrown tomatoes, 28 ounces can crushed tomatoes, 1 bundle bundle scallions, 4 ounces can diced fire-roasted green chilies, 1 medium jalapeno, 1 teaspoon chipotle sauce or minced chipotles in adobo, 1 teaspoon fresh lemon juice, 1 tablespoon olive oil, 1 1/2 cups ketchup, 1-2 tablespoon freshly grated horseradish, 1 small red onion, 1 cup your favorite jarred salsa
  • Stir until nicely combined, then fold in the shrimp.
    1 pound small cooked shrimp
  • Chill for 24 hours to let the flavors meld.
  • Just before serving, stir in the chopped avocados.
    2 medium ripe avocados, peeled and chopped
  • Serve with your favorite tortilla chips. Salsa is best served at room temperature for optimal flavor.
