1pound ground beef
2tablespoons dry taco seasoning blend
2/3cup water
½cupmild salsa
4ounces cream cheesecubed
2cupsshredded cheddar cheesedivided use
3cupsFritos Chili Cheese corn chipsor plain Fritos corn chips, if desired
2cupschopped iceberg lettuce
1mediium tomatodiced
Instructions
Preheat the oven to 350 degrees.
Heat a large skillet over medium-high heat. When the pan is hot, add the ground beef, crumbling the meat into pieces, letting it brown until no pink remains. Remove the skillet from the burner, then remove any fats that accumulate in the skillet.

Return the skillet back to the burner; stir in the taco seasoning and water.

Bring the ground beef mixture to a boil, then reduce the heat and simmer uncovered for a few minutes until all of the liquid has been absorbed.
Add the salsa and cream cheese, stirring to combine, simmering until the cream cheese has fully melted and incorporated.

Grease an 11″ x 8.5′ oven-safe baking dish with non-stick cooking spray. Pour in the meat mixture and spread it out evenly.
Sprinkle the casserole with one cup of the shredded cheese, then top that with the Fritos, spreading them evenly over the cheese.
Sprinkle with the remaining 1 cup of cheese, then bake the walking taco casserole, uncovered, on the center oven rack for 20-25 minutes or until the casserole is hot and bubbly throughout (160-165 degrees F. at the center) and the cheese has melted on top.
Let the casserole rest for 5-10 minutes before serving with your favorite taco toppings, such as diced tomatoes, sour cream, salsa, more shredded cheese, and chopped lettuce, as desired.
