Meatloaf Pie with Cheesy Hashbrowns is an old-fashioned meatloaf pie with breadcrumbs recipe that piles cheesy hashbrowns in a moist meatloaf crust with a drizzle of BBQ sauce on top.
In a large mixing bowl, gently combine the ground beef with the BBQ sauce, onions, oregano, and panko bread crumbs with 1 beaten egg, taking care not to overwork the meatloaf mixture.
3/4 pound lean ground beef, 1/2 cup BBQ sauce, use your favorite, 1 tablespoon dehydrated onions, 1 teaspoon dried oregano leaves, 1/2 cup panko bread crumbs
Place the meatloaf mixture into a greased 9″ deep-dish pie plate, pressing it evenly across the bottom and up the sides, using your fingers; reserve.
In another mixing bowl, combine the remaining 3 beaten eggs with the hash browns, shredded cheese, and parsley.
3 cups shredded frozen hash brown potatoes, 2/3 cup shredded cheddar cheese, 1 teaspoon dried parsley flakes
Gently spoon this mixture into the prepared meatloaf “crust” in the pie plate, spreading it out evenly in the center.
Place the meatloaf pie, uncovered, onto the center rack of the preheated oven. Bake for 30-35 minutes or until the hash brown mixture is nicely golden brown on top and the meatloaf crust is a deep golden brown on the bottom.
Remove the meatloaf pie from the oven and let rest for 5 minutes before slicing into pieces to serve. Meatloaf pie is delicious served with a generous drizzle of BBQ sauce, if desired.
