This Bubble Up Taco Casserole makes a big 9x13 pan full of Mexican goodness with Pillsbury canned biscuits, ground beef, cheese, and all the taco goodness.

Ingredients
1pound lean ground beefany ground meat will work in this recipe
1ounce pkg. taco seasoning
1 1/3cupsyour favorite salsa
1 tube 10-count roll canned biscuits
1/2medium purple oniondiced
1medium red bell pepperseeds and membranes removed, diced
1medium yellow or orange bell pepper seeds and membrance removed, diced
1cupshredded cheddar cheese
2medium green onionsgreen parts only, chopped, optional
Your favorite toppingssuch as chopped cilantro, salsa, sour cream, etc, optional
Instructions
Preheat the oven to 350 degrees F. In a skillet over medium heat, brown the ground beef with the taco seasoning until fully cooked throughout; drain any fats that accumulate, then stir in the salsa.
Use your kitchen shears or a knife to cut each biscuit into 8 pieces, then place half of these biscuit pieces into a greased 9x13 baking dish in a single layer across the bottom.
1 tube 10-count roll canned biscuits
Top the layer of biscuits with half of the prepared meat mixture, half of the peppers and onions, and then half of the shredded cheese. Repeat the layers, finishing with the cheese on top. (If using green onions, sprinkle these over the top of the cheese as part of the last layer.)
1/2 medium purple onion, 1 medium red bell pepper, 1 medium yellow or orange bell pepper, 1 cup shredded cheddar cheese, 2 medium green onions
Loosely cover the baking dish with foil. Bake the casserole on the center oven rack for 30-35 minutes; remove the foil and continue to bake for 15 additional minutes.
Let the casserole rest for 5 minutes then cut into squares. Garnish with your favorite toppings and serve.
