Whether you’re trick or treating, enjoying Fall Foliage, or strolling around the Kansas State Fair, having a flavorful Fall snack on hand is a must. This Pumpkin Spice Snack Mix using yummy Thrill’s Kettle Corn is my go-to for a crispy, sweet, and pumpkin spice-flavored Fall snack!

Pumpkin Spice Snack Mix

This recipe features some of my favorite Fall flavors, including cinnamon, honey nut, and of course, pumpkin spice! Just mix the pumpkin pie spice with brown sugar and sprinkle it over your prepared snack mix. Toss it all to combine, then pop it in the oven for a few minutes. During baking, the butter and syrup cause everything to brown up perfectly, giving you a sweet Fall snack bursting with flavor in every bite!

Pumpkin Spice Kettle Corn Snack Mix

Ingredients

  • 1/2 cup packed dark brown sugar
  • 2 tsp. pumpkin pie spice
  • 1/2 cup unsalted butter
  • 1/3 cup light corn syrup
  • 1/4 tsp. baking soda
  • 1/4 tsp. kosher salt
  • 1 tsp. Vain Foods vanilla extract
  • 6 cups Thrill’s Original Kettle Corn
  • 2 cups Cinnamon Chex Cereal
  • 2 cups Honey Nut Chex Cereal
  • 1-2 cups candy corn

Instructions

  1. Preheat oven to 350 degrees F. Line a large baking sheet with foil and spray with nonstick spray.
  2. In large, heat-safe bowl, combine kettle corn with both cereals.
  3. In separate small bowl, mix brown sugar and pumpkin pie spice together; set aside.
  4. In a large saucepan over medium heat, bring butter and corn syrup to a boil; simmer for one minute, stirring constantly; remove from heat and stir in vanilla, baking soda and salt. Pour this mixture over the kettle corn/cereal mixture and toss gently, using two spatulas, until well coated. Sprinkle the pumpkin spice/brown sugar mixture over the top, then toss again making sure everything is evenly coated.
  5. Spread the kettle corn mixture onto the prepared baking sheet. Bake, uncovered, on center rack of preheated oven for 5 minutes; toss and bake 5 minutes longer.
  6. Remove from the oven and let cool completely. Once cooled, break mixture into pieces and toss in candy corn. Store in an airtight container.
