Ingredients
3cans white shoe peg corn, 11 ounces each well drained
1medium cucumberpeeled, seeded, and chopped
14ounce can petite diced tomatoeswell drained
2-3tablespoons pimentos or chopped roasted red peppers from a jar
6scallions, white and green parts both chopped
Dressing
2/3 cup mayonnaise
2tablespoons red wine vinegar
1 tablespoon granulated sugar
Instructions
Chop the cucumber and scallions and place them in a large serving bowl.

Add the corn, diced tomatoes, and pimentos.

To make the dressing, combine the mayonnaise, red wine vinegar and the granulated sugar in a small mixing bowl; season to taste with kosher salt and pepper.

Drizzle the prepared dressing over the vegetables in the mixing bowl; gently toss well to combine.
