Ingredients
¼cupslivered almonds, toasted may substitute pine nuts, if desired
1-2Tbs.olive oil
½yellow onion, finely diced
3clovesgarlic, crushed or minced
¾tsp.turmeric
¼tsp.cumin
¼tsp.paprika or smoked paprika
1tsp.kosher salt
1 ½cupsjasmine rice, may substitute basmati rice, if desired
3cupswater
1Tbs.finely chopped cilantro
1Tbs.finely chopped Italian parsley
Instructions
In a large saucepan over medium heat, add the slivered almonds; cook for 8-10 minutes, stirring often, just until the almonds are fragrant and slightly toasted. Transfer the almonds to a plate and let cool.
In the same pot, still over medium heat, add the olive oil. When the oil is nicely hot, add the onions and sauté for 2-3 minutes, or until translucent; add the garlic and spices, then cook for 1-2more minutes.
Add the water to the saucepan, deglazing the bottom to release any browned bits that are attached; stir in the rice, bringing the water to a boil.
Cover the saucepan with a lid and reduce the heat to low; simmer the rice for 20 minutes, covered, or until the rice is tender and fluffy.
Remove the saucepan from the heat; stir in the cilantro and parsley. Sprinkle the toasted almonds over the top and serve at once.
