Ingredients
3ouncesfresh arugula
1largefresh peachsliced, use more, if desired
1cupgrape tomato halvessliced lengthwise
Kosher saltto taste
Red pepper flakesto taste
8 ounces Burrata cheesewell drained, use as much or as little as you prefer
Balsamic glazeto taste, I used Bertolli brabd
Pepitasoptional, but nice for some added crunch
Instructions
Place the fresh arugula into a large serving bowl.
3 ounces fresh arugula
Top with the sliced peaches and the grape tomato halves, , arranging them as desired over the top of the arugula.
1 large fresh peach, 1 cup grape tomato halves
Season with a generous sprinkling of the salt and a bit of the red pepper flakes, as desired.

Using your fingers, pull the barrata cheese apart, scattering the pieces on top of the salad with the other ingredients.
8 ounces Burrata cheese
Drizzle the balsamic glaze over everything, using as much or as little as preferred.

Garnish with pepitas, if using.

Recipe Tips If I’m serving this salad to my own family, I prepare it in a serving bowl and I serve right from the bowl.However, if you are making this for special dinner party guests, the salads will look much more beautiful if you prepare each one individually, using the same assembly steps in the recipe, just on a smaller scale.If you can’t find burrata cheese, feel free to substitute fresh mozzarella pearls in it’s place.I have made this salad using fresh baby spinach when argula wasn’t available and it was quite good, but I still prefer that peppery arugula!
