Ingredients
24 oz. fresh goat cheese logssoftened slightly
1tsp.dried thyme leaves
1/2cupfinely chopped pecanstoasted
1Tbs.honey or agave nectarwarmed a bit
Instructions
Combine the dried thyme leaves with the chopped pecans in a flat, shallow dish; drizzle with the warm honey and combine well; remove half of the prepared pecan mixture.
Unpackage the goat cheese logs, then roll the first one in the pecan mixture that remains in the shallow dish, gently pressing the pecans into all sides of the goat cheese. Remove to a serving platter. Repeat with the remaining half of the pecan mixture and the second goat cheese log.
Serve with your favorite crackers or toasted baguette slices. Or, refrigerate and serve as needed later. Allow the goat cheese logs to rest at room temperature for a few minutes before serving so the goat cheese can soften to be easier to spread. **Goat cheese logs refrigerate well for 2-3 days.
