This easy Frito Corn Salad has a creamy mayo and Greek Yogurt dressing that complements the corn, celery, tomatoes, cheese, and crunchy Chili Cheese Frito corn chips.

Ingredients
11ounce can shoe peg cornwell drained
15ounce can sweet cornwell drained
3-4medium ribs celerydiced
1medium sweet bell pepperseeds and membranes removed, diced (I like a red or orange one best)
6medium scallionschopped, green and white parts both
1cupshredded cheddar cheeseI prefer sharp Cheddar
1 - 1 1/2cupsChili Cheese Fritosbroken up a bit
Dressing
1/3cupmayonnaise, I prefer Hellman's Mayonnaise
1/3cupplain Greek yogurt
1 1/2tablespoons cider vinegar
2tablespoons granulated sugar
kosher salt and freshly ground pepper, to taste
Instructions
In a large mixing bowl, combine the dressing ingredients; whisk until smooth.
1/3 cup mayonnaise, I prefer Hellman's Mayonnaise, 1/3 cup plain Greek yogurt, 1 1/2 tablespoons cider vinegar, 2 tablespoons granulated sugar, kosher salt and freshly ground pepper, to taste
Add the corn, celery, bell pepper, scallions, and cheese.
11 ounce can shoe peg corn, 15 ounce can sweet corn, 3-4 medium ribs celery, 1 medium sweet bell pepper, 6 medium scallions, 1 cup shredded cheddar cheese
Gently toss to combine all the ingredients; chill well.
Just before serving, top with the crunchy Frito corn chips.
