Ingredients
Salad

ripe peaches, peeled, if desired, then sliced into 8 slices each

homegrown tomatoes, peeled, if desired, then quartered

arugula lettuce, may substitute baby spinach
▢

goat cheese crumbles

cooked and crumbled bacon
Dressing

spicy brown or Dijon mustard

white wine vinegar, may substitute red wine vinegar or rice vinegar

good olive oil

Kosher salt and freshly ground black pepper, to taste
Instructions
Place the arugula, sliced tomatoes, and sliced peaches into a medium serving bowl.
In a dressing cruet or glass jar with a lid, add the vinaigrette dressing ingredients; shake until well combined.
Drizzle the prepared vinaigrette dressing over the salad ingredients, tossing gently to combine.
Divide the salad between two plates, then sprinkle each one with goat cheese crumbles and the chopped bacon.
Season to taste with salt and pepper. Serve at once.
