Ingredients
 

Salad

  • 2 medium ripe peaches, peeled, if desired, then sliced into 8 slices each
  • 2 medium homegrown tomatoes, peeled, if desired, then quartered
  • 2 cups arugula lettuce, may substitute baby spinach
  • 2 Tbs. goat cheese crumbles
  • 2-3 slices cooked and crumbled bacon

Dressing

  • 1 Tbs. spicy brown or Dijon mustard
  • 1/4 cup white wine vinegar, may substitute red wine vinegar or rice vinegar
  • 1/2 cup good olive oil
  • Kosher salt and freshly ground black pepper, to taste

Instructions
 

  • Place the arugula, sliced tomatoes, and sliced peaches into a medium serving bowl.
  • In a dressing cruet or glass jar with a lid, add the vinaigrette dressing ingredients; shake until well combined.
  • Drizzle the prepared vinaigrette dressing over the salad ingredients, tossing gently to combine.
  • Divide the salad between two plates, then sprinkle each one with goat cheese crumbles and the chopped bacon.
  • Season to taste with salt and pepper. Serve at once.
