This easy corn salad has a cool, creamy mayo and Greek Yogurt dressing that compliments both the corn and the crunchy Chili Cheese Frito corn chips, making it the best Corn Salad with Fritos.
1sweet bell pepper, seeds and membranes removed, diced (I like a red or orange one best)
6scallions, chopped, green and white parts both
1cupshredded cheddar cheese, I prefer sharp Cheddar
1 - 1 1/2cupsChili Cheese Fritos, broken a bit
Dressing
1/3cupmayonnaise, I prefer Hellman's Mayonnaise
1/3cupplain Greek yogurt
1 1/2Tbs.cider vinegar
2Tbs.granulated sugar
kosher salt and freshly ground pepper, to taste
Instructions
In a large mixing bowl, combine the dressing ingredients; whisk until smooth.
1/3 cup mayonnaise, I prefer Hellman's Mayonnaise, 1/3 cup plain Greek yogurt, 1 1/2 Tbs. cider vinegar, 2 Tbs. granulated sugar, kosher salt and freshly ground pepper, to taste
Add the corn, celery, bell pepper, scallions, and cheese.
1 can shoe peg corn, well drained, 1 can sweet corn, well drained, 3-4 ribs celery, diced, 1 sweet bell pepper, seeds and membranes removed, diced (I like a red or orange one best), 6 scallions, chopped, green and white parts both, 1 cup shredded cheddar cheese, I prefer sharp Cheddar
Gently toss to combine all the ingredients; chill well.
Just before serving, top with the crunchy Frito corn chips.
