Prep Time: 10 minutesminutes
Cook Time: 7 minutesminutes
Approx. Time Needed for Instant Pot to Pressurize:: 10 minutesminutes
4-6cupschicken broth (If you're using the Instant Pot to make this recipe, you'll only need 1 cup of broth for cooking)
1lb.Kielbasa sausage, cut into chunks, may use any fully cooked sausage, such as smoked sausage, brats, etc.
5-6large red or russet potatoes, peeled, and cut into large chunks (3”-4” or so)
1lb.frozen cut green beans, thawed
Instructions
Stove Top Method
In a large pot or Dutch oven over medium heat, add the oil; when the oil is hot, add the sausages, browning them on all sides, then remove them to a plate and reserve.
In the same pot over medium high heat, bring the chicken broth to a high simmer; add the potatoes to the pot. Partially cover the pot, simmering the potatoes until they are nicely fork-tender, 20-25 minutes or so, testing them at the 10 minute mark.
Add the green beans to the potatoes during the last 5 minutes of the cooking time, simmering them just until they are al dente.
Instant Pot Method
Using the sauté setting on the Instant Pot, add a swish of oil to the pot; when the oil is hot, at the sausages to the pot, browning them on all sides. Remove the sausages to a plate and reserve.
Place 1 cup of chicken broth into the Instant Pot; add the potatoes, then lock the Instant Pot lid into place. Using the manual setting on High Pressure, set the time for 5 minutes, bringing the Instant Pot to full pressure.
When the timer sounds, perform a quick release to remove all pressure from the Instant Pot; carefully remove the lid.
Add the green beans and reserved sausages to the pot, locking the Instant Pot lid into place once more. Using the manual setting in High Pressure once more, set the time for 2 minutes bringing the Instant Pot to full pressure once again, which won’t take long at all since the contents are already hot.
When the timer sounds, perform a quick release to remove all pressure from the Instant Pot; carefully remove the lid.
To Serve
To serve, spoon the potatoes into bowls and give them a bit of a smash with a fork. Ladle some of the chicken broth over the potatoes, then top them with sausage and green beans.
Notes
Kielbasa is a pre-cooked sausage that you’ll find in the brat section of your local grocery store. You’ll also see other pre-cooked sausage there, such as smoked sausage, andouille sausage, frankfurters, etc. You can actually use any pre-cooked sausage in this recipe, too. Just make sure you don’t accidentally pick up raw, uncooked sausages as that’s not what you need for this particular recipe.
Kielbasa sausage freezes well. I like to stock up on Kielbasa or smoked sausage whenever I can catch a sale, throwing it into my freezer to use as I need it.
Browning the sausages first really adds to the flavor of the sausage. Plus once you brown the sausages, that step leaves a lot of flavor behind in the pot, which is then absorbed into the remaining ingredients giving them more flavor, as well. It’s truly a worthwhile step.
We like to serve this meal up in bowls, smashing the potatoes on the bottom as the base, then ladling the broth from the pot over the potatoes before adding the green beans and potatoes on top. So delish.
