Doesn’t everybody love Tater Tots?? Especially when combined with bacon, sausage, eggs and cheese?? This breakfast casserole is a KEEPER recipe and my family loved the flavor of the chipotle ranch dressing that I added - such good kick! This is one of my favorite breakfast casseroles to make ahead of time, too.
1lb.center-cut bacon, cooked until crispy, chopped
12 - 16oz.sausage links, cooked and sliced into fat coins
32oz.bag frozen tater tots
2Tbs.Lutz’s Ranch Chipotle Dressing Mix
2cupsshredded mild cheddar cheese
8eggs
1 1/2cups2% milk
1/2cupwhipping cream
Instructions
Preheat oven to 350 degrees.
In a large mixing bowl, combine tater tots, chopped bacon, sausage coins, and 1 3/4 cups cheese; place this mixture into a greased 9 x 13 baking dish.
Using the same mixing bowl, beat eggs, dressing mix, and milk together, then pour over the tater tot mixture in the baking dish.
Bake, uncovered, on the center rack for 45-55 minutes, or until a knife inserted into the center of the casserole comes out clean. Sprinkle remaining 1/4 cup cheese over casserole and let it melt. Serve at once.
