If you’re looking for something extra special to serve Mom this Mother’s Day, look no further than this Sweet and Spicy Bacon Candy. It is exactly as it sounds: thick cut bacon smothered in brown sugar and red pepper flakes baked to perfect crispiness.
1lb.thick-sliced bacon, such as R Family Farms Hickory Smoked Bacon
1cupdark brown sugar
1Tbs.corn meal
1/4 - 1/2 tsp.red pepper flakes
Instructions
Preheat oven to 350 degrees F. Line a baking sheet with heavy-duty aluminum foil; top baking sheet with a cooling rack that has been sprayed with nonstick spray.
Cut the bacon slices into thirds, then separate each one from the other. In a large mixing bowl, combine the brown sugar with the corn meal and red pepper flakes.
Using your fingers, dip each piece of bacon into the brown sugar mixture, coating each one well on both sides, placing them onto the cooling rack. Don’t worry if bacon pieces are touching each other as they will shrink up a bit as they bake.
Bake the bacon, uncovered, for 20-25 minutes; remove from oven to cool. (Bacon will crisp up a bit as it cools.)
