1pkg. dumpling wrappers, may substitute won ton wrappers, if desired
oil, for browning the pot stickers
Dipping Sauce
3Tbs.soy sauce
2Tbs.rice vinegar
1tsp.sesame oil
1tsp.freshly grated ginger root
1/2tsp.fish sauce
2Tbs.sweet chili sauce
1Tbs.chopped cilantro

In a small bowl, combine all the dipping sauce ingredients; reserve.
In a separate small bowl, combine all the meat bowl ingredients very well; let rest for 10 minutes.
Combine the veggie bowl ingredients in a large mixing bowl; after the meat has rested for 10 minutes, add to the vegetable mixture, combining well.
Place pot sticker wrappers onto a clean work surface (I like to use parchment paper). Grab a small bowl and fill with cool water. Onto each wrapper, place approx. 1 tsp. of prepared pork mixture. Lightly dip a fingertip or two into the bowl of water and then lightly smooth a bit of that water around the edges of the pot sticker wrapper.
Fold the wrapper over the filling, making the edges meet, pressing them together and pleating them a bit; set aside and continue until you have 10-12 pots tickers created for a batch. (Or use up all of your filling, creating loads of pot stickers. Place them onto a baking sheet, not touching, and freeze. Once frozen, place pot stickers into a freezer bag and store in your freezer. This allows you to pull out pot stickers a few at a time whenever you have a pot sticker craving! Proceed as directed below, cooking pot stickers from frozen - do not thaw first.)
Meanwhile, preheat a bit of oil in your Instant Pot, using the sauté setting. When oil is nicely hot, add the prepared pot stickers, working in batches so you don’t overcrowd the pot, browning the pot stickers on each side for just a minute or so, removing them to a plate as you work.
When all pot stickers are browned, remove the oil from Instant Pot, adding 1 cup of water along with a wire or silicone trivet. Stack the browned pot stickers onto the trivet, locking the Instant Pot into place.
Choose the High Pressure setting for 2 minutes, bringing Instant Pot fully up to pressure. When the timer sounds, perform a quick release to remove all the pressure from the Instant Pot. Carefully remove the lid, lifting the pot stickers out to a serving platter. Serve the pot stickers at once, with the dipping sauce on the side.
