Instructions
Prepare the Sausage Gravy
In a large heavy-bottom skillet (I like my 12-inch Lodge cast iron skillet) over medium high heat, cook and crumble the ground sausage until it's fully cooked and nicely browned; do not drain any fats.
Empty both packets of the gravy mix into the cooked sausage in the skillet. Over medium heat, stir the dry gravy mix into the sausage crumbles allowing it to cook for 2-3 minutes so it can brown a bit. **Don't skip this step - it may seem weird, but is essential for the gravy to taste really good as a finished product.
Pour the water and then the milk, a little at a time, into the sausage mixture in the skillet, stirring and whisking constantly until the gravy is fully thickened, smooth (except for the sausage crumbles), and hot throughout; keep warm.
Assemble the Breakfast Pizzas
Preheat oven to 350 degrees F. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper.
Meanwhile, over medium heat, melt the butter in a large nonstick skillet.Pour the prepared egg mixture into the melted butter in the skillet; use a silicone spatula to gently stir the eggs, stirring occasionally, just until they are set and fluffy, approx. 2-3 minutes.**Don’t over cook the eggs or they will be dry as part of the breakfast pizzas. Also, remember that the eggs will continue to cook in the oven as the pizza bakes.
Sprinkle 1 cup of the shredded cheese over the eggs, stirring gently to combine, then remove the pan from the heat.
Place the pizza crusts onto pizza pans, then gently spoon the cooked eggs equally onto each one.
Dollop 2 cups of the sausage gravy over the eggs on each pizza; sprinkle 1/2 cup shredded cheese over the gravy.
Bake the breakfast pizzas, uncovered, for 15-20 minutes, rotating them top to bottom half way through the baking time. The pizzas should be hot and bubbly throughout and golden brown on the bottom.
Remove the pizzas from the oven and garnish immediately with chopped scallions and red bell peppers, if desired. Let the pizzas rest for 5 minutes before slicing into 8 pieces each.
