Ingredients
Salad
2medium ripe peaches, peeled, if desired, then sliced into 8 slices
2fat homegrown tomatoes, peeled, if desired, then sliced and quartered
2cupsbaby arugula, may substitute baby spinach
2Tbs.goat cheese crumbles
2slicescooked and crumbled bacon
Dressing
1Tbs.spicy brown or Dijon mustard
1/4cupwhite wine vinegar
1/2cupgood olive oil
Kosher salt and freshly ground black pepper, to taste
Instructions
Place the arugula, tomatoes, and peaches in a medium serving bowl. In a dressing cruet or glass jar with a lid, add the dressing ingredients; shake until well combined. Drizzle the prepared dressing over the salad ingredients, tossing gently to combine. Divide the salad between two plates, then sprinkle each one with goat cheese crumbles and the chopped bacon.
