Ingredients
1lb.lean ground beef
1Tbs.your favorite taco seasoning
16oz. can refried beanswarm
8flour tortillas8-inch
1cup shredded cheddar or Colby/Jack cheeseas desired
Your favorite taco toppingssuch as sour cream, salsa, tomatoes, lettuce, etc.
Instructions
Preheat the oven to 375 degrees. In a large skillet over medium high heat, cook and crumble the ground beef until no pink remains and the ground beef is fully cooked throughout; drain any fats that accumulate. Stir the taco seasoning into the cooked ground beef until well combined.
Meanwhile, spray a large rimmed baking sheet with non-stick spray. Lay the flour tortillas out on a large sheet of foil or parchment paper; brush one side of each tortilla lightly with oil or spray with non-stick spray.
Spread 2 tablespoons of the warm refried beans over each tortilla; sprinkle with the desired amount of shredded cheese.
Divide the prepared ground beef mixture between the tortillas, spreading it out evenly over just one side of the tortilla; fold each tortilla in half, placing each quesadilla onto the prepared baking sheet.
Place a second rimmed baking sheet over the top of the quesadillas; bake the quesadillas on the center rack of the oven for 10-15 minutes, or until hot throughout and golden brown on both sides. Serve at once with your favorite taco toppings!
