There are so many Instant Pot moonshine flavors you can make. I've sampled many of them and I'm still in love with this Apple Pie Moonshine by far. It's super fun (and fast) to make in your Instant Pot.

Ingredients
3/4cupgranulated sugar
3/4cuppacked dark brown sugar
64oz.apple cider
64oz.apple juicemay use 128 oz. of apple juice for this moonshine if you can't locate apple cider
5cinnamon sticks
2Tbs.your favorite cider mulling spices
1 1/2 - 2cupsEver Clear alcohol
cinnamon sticks for adding to jars, if desired
Instructions
Combine everything EXCEPT the Everclear in the Instant Pot - apple juice, apple cider, both sugars, 5 cinnamon sticks, and the mulling spices.
Using the saute setting, let the liquids heat up, stirring occasionally.
Once the sugars have dissolved, add the Instant Pot lid, locking it into place.
Choose the high pressure setting, setting the timer for 45 minutes, bringing the Instant Pot to full pressure. When the timer sounds, allow the Instant Pot to de-pressurize on it's own (this is called a natural pressure release).
Once all the pressure has naturally released from the Instant Pot, unlock and remove the lid, giving the ingredients a gentle stir. Let the moonshine cool completely, then stir in the Ever Clear alcohol.
Pour the moonshine into glass canning jars (I use 8 oz. jars for gift giving), adding a cinnamon stick to each jar. Add the lids to the jars and seal well. Store the moonshine in a cool dark place. Can be consumed right away, but will get better with age.
Notes
When making any flavor or any kind of moonshine (or any alcoholic beverage in your Instant Pot), NEVER EVER add the alcohol for any part of the pressurization process. This is totally unsafe!!Instead, add the alcohol AT THE END OF THE PRESSURE COOKING PROCESS. This is important for two reasons:
Cooking alcohol under pressure is very dangerous – don’t do it!
Cooking alcohol under pressure could also cause your alcohol and all it’s flavors to evaporate due to the high heat.
Mulling spices can be found each Autumn at your local grocery store, usually in the produce department near the jugs of apple cider or sometimes in the coffee section where they typically keep the boxed cider instant beverage mixes. I’ve also purchased it from Amazon and also World Market.Keep the moonshine in a dark, cool place until you are ready to enjoy it or give as gifts. If the moonshine is store in glass jars with tight fitting lids, it will keep for up to a year….at least!There are two school of thought on moonshine aging- some say it’s best right when you make it, others like to let it age. There is no wrong answer here! Let your taste buds determine what’s best for you and yours.I like to enjoy my moonshine over ice so I can sip it. I’ve heard some of my friends talking about using Apple Pie Moonshine to make slushies. (???) And, there are always those who like moonshine for shots.
