Grandma’s Kielbasa Pot with Potatoes and Green Beans

Ingredients

  • swish of olive oil or vegetable oil
  • 4-6 cups chicken broth (If you're using the Instant Pot to make this recipe, you'll only need 1 cup of broth for cooking)
  • 1 lb. Kielbasa sausage, cut into chunks, may use any fully cooked sausage
  • 5-6 large red or russet potatoes, peeled, and cut into large chunks (3”-4” or so)
  • 1 lb. frozen cut green beans, thawed

Instructions

Stove Top Method

  1. In a large pot or Dutch oven over medium heat, add the oil; when the oil is hot, add the sausages, browning them on all sides, then remove them to a plate and reserve.
  2. In the same pot over medium high heat, bring the chicken broth to a high simmer; add the potatoes to the pot. Partially cover the pot, simmering the potatoes until they are nicely fork-tender, 10-15 minutes or so, testing them at the 10 minute mark.
  3. Add the green beans to the potatoes during the last 5 minutes of the cooking time, simmering them just until they are al dente.

Instant Pot Method

  1. Using the sauté setting on the Instant Pot, add a swish of oil to the pot; when the oil is hot, at the sausages to the pot, browning them on all sides. Remove the sausages to a plate and reserve.
  2. Place 1 cup of chicken broth into the Instant Pot; add the potatoes, then lock the Instant Pot lid into place. Using the manual setting on High Pressure, set the time for 5 minutes, bringing the Instant Pot to full pressure.
  3. When the timer sounds, perform a quick release to remove all pressure from the Instant Pot; carefully remove the lid.
  4. Add the green beans and reserved sausages to the pot, locking the Instant Pot lid into place once more. Using the manual setting in High Pressure once more, set the time for 2 minutes bringing the Instant Pot to full pressure once again, which won’t take long at all since the contents are already hot.
  5. When the timer sounds, perform a quick release to remove all pressure from the Instant Pot; carefully remove the lid.

To Serve

  1. To serve, spoon the potatoes into bowls and give them a bit of a smash with a fork. Ladle some of the chicken broth over the potatoes, then top them with sausage and green beans.
