24wonton wrappers, 3" x 3", found in the Asian section of the produce department of your favorite grocer
8oz.cream cheese, softened
¼cupgranulated sugar
1tsp.almond or vanilla extract
2cupsfresh blueberries
2cupssliced strawberries
1/4 - 1/2cupgranulated sugar, depending on how sweet you prefer the berries to be
zest of ½ lemon
zest of ½ orange
2-3Tbs.triple sec liqueur
fresh mint, for garnishing
Instructions
Preheat oven to 375 degrees.
Place the berries into a bowl with the sugar, lemon zest, orange zest, and triple sec; toss gently to combine and set aside.
Line baking sheets with aluminum foil and spray generously with nonstick spray. Place the won ton wrappers onto the prepared baking sheet, making sure they don't touch each other, working in batches if needed.
In a small sauté pan over low heat, warm the honey to liquefy it. Using a silicone brush, brush each won ton wrapper with the warm honey; bake just until golden brown, watching closely, so the won ton wrappers don’t get too dark, approximately 8-10 minutes. Immediately remove the won ton wrappers to a wire cooling rack. (This is a must at this point! If the won ton wrappers cool on the foil, you won't be able to pry them off and they break.)
Meanwhile, In a medium mixing bowl, beat the cream cheese, sugar, and almond extract until smooth.
To create the napoleons, spread some of the cream cheese mixture onto each baked won ton wrapper, then top with berries. Add a second won ton wrapper on top, then repeat with cream cheese and more berries. Garnish with mint and serve at once.
