This fool-proof method of making Pork Tenderloin in the Instant Pot has changed my dinnertime game. I am always amazed at how quick it is, and how I can get perfectly cooked pork tenderloin on the table with such ease (and so deliciously)! This recipe is made great by pairing pork with its favorite flavor buddy: APPLES. The Trick to a Safe Internal Pork Temperature

Using an instant-read meat thermometer really helps us keep from over or under cooking meats, especially PORK. I recommend always having one on hand when you’re cooking any kind of meat. After all, knowledge is power, and when you KNOW what your meat temperature is, you’ll also know that you’re serving a safe, perfectly cooked dish. As for pork, when you insert an instant read thermometer into the center of the cooked pork tenderloin after it’s rested in the Instant Pot, it should ideally register 145 degrees F and have a nice blush of pink when sliced into medallions. Remember: no more grey pork, pink is perfect!

Ingredients

  • 1 pork tenderloin approx 1 lb.
  • 1 tsp. Montreal Steak Seasoning
  • 1-2 Tbs. olive or canola oil
  • 1 Tbs. all-purpose flour
  • 1 cup apple cider May sub apple juice
  • 3 Granny Smith apples peeled, cored, and sliced
  • 1/3 cup dried cranberries
  • 2 Tbs. packed dark brown sugar
  • 1 tsp. kosher salt
  • 1 Tbs. unsalted butter

Instructions

  1. Season pork tenderloin with steak seasoning. Using the sauté setting on the Instant Pot, add 1 Tbs. oil; when the oil is hot and sizzling, add the pork tenderloin, browning it on all sides. Transfer the tenderloin to a plate and reserve.
  2. Add the remaining tablespoon of oil and the flour to the Instant Pot; cook for 1 minute, stirring as it cooks.
  3. Whisk in apple cider, cranberries, and brown sugar, stirring to bring up any browned particles from the bottom of the pot into the sauce. Add the sliced apples to the pot, then nestle the pork tenderloin on top.
  4. Lock the Instant Pot lid into place and choose the High Pressure setting for ONE minute, bringing the pot to full pressure. When the timer sounds, immediately unplug the Instant Pot and use a natural release for 8 minutes, followed by an immediate quick release to remove any remaining pressure, if its still there.
  5. Remove the pork tenderloin to a cutting board and slice into medallions. Stir the butter into the warm sauce in the Instant Pot. Serve the medallions on a bed of the warm apple cranberry sauce.

Recipe Notes

Why unplug it? Because after the cooking timer is up, the Instant Pot automatically switches itself to "warm" mode. Even warm mode can take a pork tenderloin from perfectly pink to grey and leathery.
