Fish Tacos with Fresh Cucumber Salsa

I love how the start of a New Year inspires people to get healthy (myself included). While crash dieting isn’t practical, rounding out an active lifestyle with whole foods and fresh food choices is never a bad idea! Today I’m sharing a recipe for delicious fish tacos with fresh cucumber salsa that you’ll definitely want on your weekly menu rotation.

Cool as a Cucumber!

The creole seasoning on the fish gives it tons of flavor while the fresh, crisp cucumber salsa is tossed in a creamy coleslaw dressing. It’s the perfect balance for the fish. If you don’t want to use a bottled dressing, HERE is one of my favorite homemade recipes that uses a blend of mayo and Greek yogurt for a healthier version of this creamy topping.

Lighten Things Up with Fish and Cucumber Taco Bowls!

Greek yogurt in place of some of the mayo lightens the dressing, but I sometimes opt out of carbs, too, by eating a fish taco bowl! I just take away the tortilla, filling a bowl with the prepared prepared salsa and topping it with the flaked tilapia. You could also serve these on corn tortillas which would lower the sugar, sodium, and saturated fat content. Winner winner, Fish Taco dinner!

Fish Tacos with Fresh Cucumber Salsa

  • 2 lbs. fresh tilapia fillets
  • Creole seasoning I like Tony Chachere’s
  • Canola oil to saute
  • 8-10 small flour tortillas warmed


  • 1 cup cucumber peeled, seeded and diced
  • ½ cup red onion diced
  • ½ cup Roma tomatoes diced
  • 1 jalapeno seeded and minced
  • 1 Tbs. fresh minced cilantro
  • Hidden Valley Coleslaw dressing to taste
  • 1 bag coleslaw mix


  1. Season tilapia fillets with Creole seasoning to taste. In a large saute pan over medium high heat, add a small amount of oil. When oil is hot, add seasoned fillets; saute 3-4 minutes on each side or until done and fillets flake easily with a fork.
  2. Place salsa ingredients in a small bowl and toss gently with coleslaw dressing to combine.
  3. To serve fish tacos, spread a small amount of coleslaw dressing over tortilla, then sprinkle coleslaw mix over dressing.
  4. Next, crumble warm fillets over coleslaw mix and top with salsa.  Roll up and eat at once.
  5. Serves 4-5
