Nothing says “game day” like a spread of appetizers and snacks. Finely mince 1/2 cup red bell pepper, 3 tablespoons green onions (green part only) and 1-2 jalapenos. Don’t forget to remove those seeds and wash up well! We want your appetizer to have a little burn… not your eyes! Toasting the chopped pecans lightly on the stove will bring out their wonderful nutty flavor and really set your cheese ball apart. Just toast until lightly browned and you can see the oils starting to come out of the nut.

Stir your ingredients according to the recipe with 2 packages of softened cream cheese. Roll the whole ball in your reserved pecans. At this point, you’ll want to refrigerate your cheeseball to marry those flavors. But it’s a good idea to pull it out a few minutes before serving so that it’s soft enough to dig into with your spreading knife and your favorite ginger snaps!

  • 2 - 8 oz. pkgs. cream cheese softened
  • 1 - 8 oz. can crushed pineapple well drained
  • 1-2 jalapenos seeds and membranes removed, finely minced
  • ½ cup finely minced red bell pepper
  • 3 Tbs. finely chopped green onion green parts only
  • 2 tsp. seasoned salt
  • 2 cups toasted chopped pecans, divided use
  • Ginger snaps or your favorite crackers



  1. In a large mixing bowl, combine all of the ingredients with 1 cup of the pecans. Shape into a nice, fat ball.
  2. Place the remaining 1 cup of pecans onto a platter and roll the cheese ball in the pecans, covering well on all sides.
  3. Refrigerate cheese ball until ready to serve. Delicious served with ginger snaps.
