I use these to pack a healthy breakfast casserole, to “beef up” the nutrients in make-ahead egg cups, or to just eat as a quick, healthful lunch bowl.

This recipe packs a healthy punch with a twist of the wrist. Using just two small zucchini and your favorite zoodle maker (Here’s My Favorite), twist away until you have a bowl full of ‘zoodles’. Meanwhile, heat a little olive oil or coconut oil over medium high heat. When oil is hot, toss in your zoodles along with your favorite pesto. Toss it to coat.

The “SPEEDY” part! Saute for 30-60 seconds. That’s right! JUST 30-60 SECONDS in the skillet and your zoodles are done! Put them in a bowl, then top with a delicious farm-fresh egg (like the one pictured). Now you’ve got yourself a protein-packed, low-carb, flavor-filled lunch that will get you through the day. Enjoy!

Speedy Pesto Zoodle Bowl for One

Ingredients

  • 2 small skinny zucchini
  • Olive oil for sauté-ing
  • 2-3 tsp. of your favorite basil pesto
  • 1-2 eggs cooked to over-easy, seasoned to taste with salt and pepper, kept warm

Instructions

  1. Using your favorite zoodle maker, use both zucchini to make a pile of zoodles.

  2. Meanwhile, in a small skillet, heat a tiny bit of olive oil over medium high heat. When the oil is nicely HOT, add the zoodles along with the pesto, to the skillet, tossing to coat.
  3. Cook the zoodles for 30-60 seconds, then remove the zoodles from the heat to a bowl; top with the fried eggs. Serve at once!
