Instant Pot Pork Pot-Stickers

Electric Pressure Cooker Potstickers

Meat Bowl

1/2 lb ground pork
1 tsp. corn starch
1 Tbs. soy sauce
1/2 tsp. kosher salt
1/4 tsp. black pepper
1/4 tsp. red pepper flakes
1 Tbs. chopped fresh cilantro
1 Tbs. freshly grated ginger root

Veggie Bowl

1 small zucchini, shredded (I left the skin on)
1 cup matchstick carrots, chopped finely
1 cup shredded cabbage, chopped finely
3 scallions, green and white parts, finely chopped

1 pkg. dumpling wrappers (may substitute won ton wrappers)
Oil, for browning Pot Stickers a bit

Dipping Sauce

3 Tbs. soy sauce
2 Tbs. rice vinegar
1 tsp. sesame oil
1 tsp. freshly grated ginger root (I usually keep a tube of Gourmet Garden Stir-In Ginger Paste in my fridge at all times)

Squeezable Ginger | Electric Pressure Cooker Potstickers

1/2 tsp. fish sauce
2 Tbs. sweet chili sauce
1 Tbs. chopped cilantro

Directions

In a small bowl, combine all dipping sauce ingredients; reserve.

In a separate small bowl, combine all meat bowl ingredients very well; let rest for 10 minutes.

Combine veggie bowl ingredients in a large mixing bowl.

After meat has rested for 10 minutes, add to veggies and mix well.

Electric Pressure Cooker Potstickers

Place pot sticker wrappers onto a clean work surface (I like to use parchment paper). Grab a small bowl and fill with cool water.

Onto each wrapper, place approx. 1 tsp. of prepared pork mixture. Lightly dip a fingertip or two into the bowl of water and then lightly smooth a bit of that water around the edges of the potsticker wrapper.

Creating a Potsticker

Fold the wrapper over the filling, making the edges meet, pressing them together  and pleating them a bit; set aside and continue until you have 10-12 potstickers created for a batch. (Or use up all of your filling, creating loads of potstickers. Place them onto a baking sheet, not touching, and freeze. Once frozen, place pot stickers into a freezer bag and store in your freezer. This allows you to pull out pot stickers a few at a time whenever you have a pot sticker craving! Proceed as directed below, cooking pot stickers from frozen – do not thaw first.)

Homemade Electric Pressure Cooker Potstickers

Meanwhile, preheat a bit of oil in your Electric Pressure Cooker, (you can use an Instant Pot or another brand of EPC) set on sauté setting. When oil is nicely hot, add prepared pot stickers, working batches so you don’t overcrowd the pot, browning pot stickers on each side for just a minute or so, removing them to a plate as you work.

When all potstickers are browned, remove oil from EPC pot and add 1 cup of water along with a wire or silicone trivet. Place browned pot stickers onto trivet and lock EPC lid into place.

Choose High Pressure setting for 2 minutes, bringing EPC fully up to pressure. When timer sounds, perform a quick release to remove all pressure from EPC pot. Remove lid and carefully lift pot stickers out.

Serve pot stickers at once, with dipping sauce on the side.

  • Choose the High Pressure setting for 2 minutes, bringing Instant Pot fully up to pressure. When the timer sounds, perform a quick release to remove all the pressure from the Instant Pot. Carefully remove the lid, lifting the pot stickers out to a serving platter. Serve the pot stickers at once, with the dipping sauce on the side.
