With just a few whole ingredients and a skillet, you can have this rustic take on an Italian Classic ready for your guests in minutes! My two-ingredient pizza dough is so unbelievably simple that anyone can make it. Just pan fry it, top it with all of your favorite fresh ingredients, and serve it warm with a delicious Kansas wine!
Pan-Fried Pizza Margherita
1 cup plain greek yogurt
1-1/2 cups self-rising flour
Combine yogurt and 1 cup flour in a large mixing bowl; mix until combined, adding remaining 1/2 cup flour a little at a time until dough comes together and isn’t sticky.
Place dough onto a lightly floured work surface and knead by hand for 1-2 minutes.
Divide dough into 8 equal pieces, then roll each one out into a small dough round, approx 4”- 6” in size.
6 oz. can tomato paste
2 Tbs. basil pesto
1/2 cup water
(I often add a splash of red wine vinegar, as well…when feeling like it.)
Combine all ingredients in a small bowl until smooth.

fresh basil, chopped
Roma tomatoes, seeded and thinly sliced
Preheat oven to 375 degrees F. In a large cast iron (or any heavy-bottomed skillet) over medium high heat, add a bit of olive oil. When oil is hot, gently add a dough round to the skillet; cook until golden brown, turning to cook on both sides, then remove to a paper towel-lined plate and keep warm. Repeat with remaining dough rounds until all are cooked.
To create pizzas, place pan-fried crusts onto a large baking sheet (or into large cast iron skillets); spread desired amount of pizza sauce over each crust, then top with mozzarella, tomatoes, and basil.
Bake for 12-15 minutes, uncovered, or until mozzarella is very softened and melted. Sprinkle pizzas with Parmesan and serve at once.
