20-Minute Roasted Swai, Tater, and Veggie Sheet Pan Meal
Who knew that just a few basic ingredients thrown together in a sheet pan could provide such a beautiful meal with so much flavor. Don’t you love how roasting brings out the best in vegetables?? Plus, those fish fillets (such as swai or tilapia) cook so fast. Best of all, there’s only ONE pan to clean up!
20 Minute Roasted Swai, Tater, and Veggie Sheet Pan Meal
12 oz. bag frozen cut green beans, thawed
1 lb. small yellow or red potatoes, quartered
1 clove garlic, crushed
1 pint grape tomatoes
4 Swai or tilapia fillets, seasoned with your favorite Cajun Seasoning blend Olive oil, for drizzling
kosher salt and freshly ground black pepper
Preheat oven to 450 degrees F.
Place potatoes onto a rimmed greased baking sheet and toss with a bit of olive oil and the garlic.
Place baking sheet, uncovered, into the oven on the center rack and cook 5 minutes.
Remove baking sheet from the oven and move the potatoes to one side of the baking sheet; add the green beans next to potatoes and toss with a bit of oil; return pan to oven for 10 minutes.
Lastly, add tomatoes and swai to the sheet pan next to the green beans. Return sheet pan to the oven for the final 5 minutes. (The fish will cook very quickly at this temperature. To test fillets for doneness, insert a fork into the center of a fillet; if fillet flakes easily, fish is done.)
