Sometimes it’s just to hot to cook anything. Thank goodness for easy and refreshing summer salads like this one! I often even skip the draining of the zucchini proceed right to the assembly.
Zoodle Salad for One
1 medium zucchini, skin on, spiralized
12 grape tomatoes, halved
1-2 Tbs. Feta crumbles
1 Tbs. good olive oil
1 Tbs. lemon juice
A bit of lemon zest
Place zucchini into a colander and sprinkle with a bit of salt; toss to combine and let drain for a few minutes; gently squeeze zucchini to release any extra moisture.
Combine dressing ingredients in a jar with a lid; shake well to combine and toss with zucchini in a bowl. Top salad with tomatoes and Feta; season to taste with salt and pepper, if needed.
This would be good with a few roasted garbanzos thrown in as well!
